SE Staff Picks: Our Favorite Cheeses

Pecorino Toscana. So delicious. Have yet to try one that I didn't like although I won't be satisfied until I've tried them all.

KettlePizza Weber Grill Insert: The Unboxing

I believe this is as thick as the Weber kettle itself.

Gadgets: Vinturi Essential Wine Aerator

I love mine and use it frequently with younger/cheaper reds. I still love decanting in the more traditional manner but often don't have the time/foresight and this is a good substitute. Let me echo Maggie Hoffman's warning about tasting first. Some really light wines (a Gamey based wine for instance) can really fall flat with this.

How to Make Grilled Pizza

Kenji - how are you not 1000 lbs?!!!! THat looks amazing. My issue with grilling pizza has been getting the heat even. If the crust is at all larger it cooks unevenly. May have more to do with my grill though....

What Are Your Desert Island Foods?

A drink. Good wine to go with Wild Roast Boar. Perhaps a nice Barolo?

Knife Skills: How to Sharpen a Knife

$20 Wusthof sharpener works really, really well for western knives. I have a stone but it is no better and much more work.

When people come to my home and cook with me they typically react to my knives by saying something like - "I really need to sharpen my knives!"

Exact model I use found on amazon here link

What's Your Favorite Way to Cook Potatoes?

Idaho baking potato - put in a bowl and pour olive oil over them. Then sprinkle on really good salt. Put on a grill naked over indirect heat. No foil or anything. Skin gets amazingly crispy and the lovely baked potato inside is delicious after an hour.

Artichokes in NYC

I can't answer your question but may I suggest heading to Maialino for their fried artichokes while you wait/search for good fresh ones?

Slice Poll: Do You Make Pizza at Home?

A perfect homemade pizza is my holy grail. I have not yet come close but I love the pursuit. I would say that most pizza joints aren't that close either.

Cuisinart food processor

It is pricey but the Cuisinart ELITE 16-cup is amazing. I bought it because I don't really have room for a mixer in my kitchen and I love to bake bread. This baby does a great job with bread and anything else you might imagine using a food processor for.

There are three sizes (11, 14, and 16 cup) but all have similar motor and features. What I like about the 16 is there are three nested bowls that allow for multiple jobs done in one cooking session. Couldn't be more pleased with my purchase (the 16-yr old version of me is totally mocking the almost 40-yr old me for responding to this....)

Do You Spit When Wine Tasting? Here's How

@d6j6r6 better than stumbling around for the rest of the day! When in Rome! What I don't like are people spitting out wine at a wine bar or other situation where it isn't a real "tasting" but you are turning it into one. Conditional answer I realize but a practical one.

Serious Eats Road Trip: Tarry Lodge

Wow. Just wow!

So envious of your trip. Looks like you had a great time. This makes me want to replicate the trip and/or become a better pizza chef myself. I keep telling myself I need a hotter oven but I don't think that is the case.

Serious Beer: English Porter

Thanks for the taste test. Always love when you do these. Would love to see you rank Anchor Steam and Sierra Nevada's porters. Both are fairly easy to find and, IMHO, delicious.

'Gourmet' Magazine: 1941–2009

I'm hoping Ruth (and others I don't know by name) take their passion to other arenas and carry on the mission. I guess I'm partially to blame as I let my subscription lapse....
