Spice Hunting: Asafoetida (Hing)

I used to work in a fancy food and bulk spice shop in Hyannis, Mass (Cardoo's...anybody?). We had asafoetida but had to keep it hermetically sealed and then stored in the spice display. People often asked what it was because it has that funny name but we couldn't open it because the stank would clear the store. The other thing I remember about asafoetida is that Granny Clampett (Beverly Hillbillies) used it as a home remedy, tied in a bag around the neck, it warded off evil. It also would have been a good chastity belt for Ellie Mae!
