I never eat food in India until after the two-week mark (to get used to all their various microbes) but when I do, vada pav is one of the first things I get! I remember when I worked in Bombay, the first time my co-workers asked if I wanted to go for burgers, I was very confused, but very pleased.

My aunt would occasionally use pau buns for breakfast and make pau bhaji with chickpeas and onions, etc. very yummy. You can get pav buns in Edison, NJ if on the East Coast. Devon Street in Chicago. Not sure of the Indiatowns in other places, but know they are in Riverside, CA and Atlanta and Houston!

@Olallieberry, I was obsessed with trying these after reading about them in Maximum City by Suketu Mehta. Sukhadia's in midtown makes them, and I tried them once. They were okay - kind of cold but in their defense I got there at an off hour. You have to read Suketu's description of vada pav to really get motivated to cook them and make em yourself. Here's a recipe I posted for them along with an excerpt of Suketu's description. You must try them!
