How do you cook a smoked pork picnic shoulder in the oven ? I always boil it ( like in a New England Boiled Dinner ) but I'd love to bake it . Any suggestions as to what to do with the heavy fat layer that sits atop it ? Do you remove it or score it and leave it on ?
