what to do with chive flowers

Cook mushrooms in a little butter and toss into pasta with pasta water, a a couple egg yolks, some chive flowers and a some scallions, though chives would seem more natural.. It's pretty wonderful.

The complete dish is a pavlova topped with lavendar whipped cream and raspberries.. However, lavender whipped cream and raspberry would be excellent on its own.

Nice because fat people on the computer are having a hard enough time getting sustinance. All we need is a computer chair with a toilet and we are good to go.

"fix" an unripe avocado?

The best thing you can do is put the bad avocado down and go to a Spanish Grocery.. They always have ones ready to go.

Hershey's to Close Scharffen Berger Plant in Berkeley; Robert Steinberg Spinning in Grave

Bottom line is, this guy sold the company to a large company.. If he really gave a shit he would have had in the contract that the Factory must remain open..

I doubt this businessman was so naive that he thought Hershey was going to continue in the same direction..

Large company buys small company with a great name.. Large company strips the small company only keeping the name and nothing else..

This is nothing new.

Mystic Pizza, Twenty Years After the Movie

Mystic Pizza is probably the most disgusting pizza place I have ever been to.. I went to school in the South and have been to places that served ketchup and craft slices on Wonder Bread.. Well not really but, you get the point..

They even have one of those rotating pizza things that are housed inside the glass box with the heat lamps.. The type of machine you find at gas stations..

Its shameful how gross the pizza is there. Get a lobster roll down the street and get your pictured taken out front.

LIMITED EDITION: McDonald's 1/3rd pounders

I really enjoyed the 1/3 pounder at Mc Donalds.. I had already eaten that night but couldnt resist when walking by.. Took a bite of the burger and found it to be juicy and tasted like more beeth then anything I have had at Mc Donalds..

I would get this before any other burger mc donalds has.. But if the person at the counter was nice, I might try to get a side of Big Mac Sauce.

Question of the Day: What's your burger style?

My last few burgers have been mini burgers.. Make square patties and cook with onions, serve on those little martin potato rolls.. But James Beard had a recipe for making burgers where he would add cream to the meat before shaping.. How could that not be good.. I want to try that next time..

This is a late response, but am posting anyways. My mom always made a great stir-fry using nothing but chive-flowers (cut about 2-in lengths), ground pork, and oyster sauce. I've since added julienned carrots & red bell peppers to the mix. Absolutely delicious & beautiful to look at!

I made lavender custard once. I don't remember exactly how I did it, but I may have simmered the lavender flowers in either water or the milk used to make the custard. It had a very subtle, sweet mellow flavor.

Honey infused lavender is very nice on french bread with a little feta.

From Talk

using fresh lavender....

I made a lavender creme brulee a few years ago that was really good. (I know that creme brulee is somewhat out of fashion with the chi chi crowd but I still like it.) Anyway, I couldn't find the recipe, but it was a pretty standard one except that you warm some of the cream and steep a small amount of flowers in it for about 5 minutes. Let it cool before continuing. I also recall that the amount of flowers didn't seem like much, maybe a tablespoon or so, and that the cream didn't taste very lavender-y when I strained it. But the end result was subtly flavored. My very snooty neighbor (we had her over for dinner as a thank you for a favor) was quite impressed.

As a side note, I am really racking up the $$ because you guys keep posting all these fabulous things to order! Now I have to get some of that lavender/passion fruit jelly! Got to love the interwebs!

From Talk

I love to melt some butter, put in chopped basil and chive blossoms (and/or regular chives), and pour it over hot popcorn. So good!

I'm going to have to make the chive blossom gnocchi this weekend. I have some potatoes that I need to use up. The curried yam salad looks and sounds wonderful too. Thanks to you all for sharing your recipes. My husband, who is the recipient of all of my experimentation, thanks you too!

Yum. I am so sorry mine died last year.
I do shortbread, lemonade, infused bourbon, in jam and jelly (dandelion and lavender is awesome, so is raspberry/lavender) on chicken and pork with citrus and honey, syrup (for everything from drinks to soaking for cakes), flavored butter, in a sweet cheese dip, to soak apples in before I dry them, lemon cakes, and in the water when I steam zucchini.

Now I am craving some! Time to poke around the market I guess.

Lavender Lemonade:

1 tray ice cubes
1/4 cup dried lavender
2 cups boiling water
3/4 cup white sugar
8 lemons
5 cups cold water, or as needed

DIRECTIONS
Place ice cubes into a 2 quart pitcher. Place the lavender into a bowl, and pour boiling water over it. Allow to steep for about 10 minutes, then strain out the lavender and discard. Mix the sugar into the hot lavender water, then pour into the pitcher with the ice.
Squeeze the juice from the lemons into the pitcher, getting as much juice as you can. Top off the pitcher with cold water, and stir. Taste, and adjust lemon juice or sugar if desired. Pour into tall glasses, pull up a lawn chair and a good book, and relax!

@bareneed I use it straight from the garden. It's best just before it blooms.

English lavender is the best for cooking.

I've also used lavender for simple syrup to add to tea or cocktails and I have made lavender infused vodka (the flavor of the vodka is intense, a little goes a long way).

From Talk

Go make any kind of fresh fruit pie (peach and lavender are great), and add a teaspoon or two crushed lavender to the fruit mixture. It really brings out the floral scent and flavor out of the fruits.

From Talk

what to do with chive flowers

I dont know about the properties of chive flowers, but soaking anything in oil has the risk of botulism. Clostridium bacteria are obligate anaerobes, so they can't live in the regular air. So.. the oil-based environment is perfect for it! Clean them well, but not excessively if it will effect the taste. Don't make too much of it, and store it in the refrigerator. If it turns color or starts looking cloudy or smells funny, dont keep it.

We occasionally use a meat rub that has a prominent lavender note. It's great for steaks on the grill. Try substiting a little lavender for rosemary in a dish. Just use less until you aquire a taste for it.

Lavender syrup or cordials are nice too. Add a splash to fresh lemonade with a sprig of mint for a refreshing flavor change.

@bareneed - good question, i'm not sure if mine is ornamental or culinary... it's the second season in the garden, so there's no chem fertilizers or spray on the plant.

i'm interested in savory or salad applications as well.... thank you...

'Top Chef Masters' Host Kelly Choi: 'Food Bloggers Are Mean'

Her points seem very straight forward and valid. Anonymous criticism that is either malicious or personal (i.e.: not constructive) is cowardly whether it occurs in a owners blog, through comments, or in reviews such as Menupages, Yelp, etc.

I wonder what the participation of comments would be on Serious Eats if they could not be anonymous...

From Serious Eats

'Top Chef Masters' Host Kelly Choi: 'Food Bloggers Are Mean'

With the exception of 1 blog in my blog roll, the food blogs that I read do not do reviews of restaurants. They cook their own food, comment on it, share ideas, etc.

As far as the "anonymous" complaint, she should be more worried about the customer that anonymously leaves the restaurant unsatisfied, than one blogger. The negative comments I usually hear are after lunch at work (I ate at _______ and it was awful) or on Monday's (we went to so and so over the weekend and were Sooooo disappointed).

From Serious Eats

'Top Chef Masters' Host Kelly Choi: 'Food Bloggers Are Mean'

There's a food site I know of where the comments range from fanboy fawning to total condemnation. In the end, the restaurant got their money...they got food and the thrill of posting about it so they can pretend to be food critics. Then they sign up for "Rock 'n Roll Camp".

'Top Chef Masters' Host Kelly Choi: 'Food Bloggers Are Mean'

I value the opinion of 99.9% of food bloggers more than Kelly Choi. Most of them eat, and quite a few of them can string sentences together in an impromptu fashion without the use of a teleprompter. Yes, perhaps most of them don't have a size 0 behind attached to a 5'11 body. But you can tell by reading if someone knows food and you should respect their opinion, more often than not--versus someone who becomes a 'food personality' based upon their appearance alone.

But if I was a supermodel who looked like Kelly Choi, I wouldn't bother learning too much about food, so I can't blame her too much :P
