being a former radio dj turned pastry chef (still in training) my ears get treated relatively well when i'm in the kitchen. its gotta be turned up super loud because spending most of my adult life in headphones has left me straining to hear things a bit more than most people my age.
but i listen to everything from Sharon Jones & the DapKings to Dillinger Escape Plan, to Steely Dan, to Jay-Z. its GOTTA be upbeat though. I love the Magnetic Fields but probably couldn't go 10 hrs in a restaurant kitchen or my own with that on.

the standby in my fridge is baby carrots and hummus. its so easy to polish off 1lb of carrots without blinking. however...when i'm starrrrrrving with a sweeter tooth. and nothing's cuttin it...its gotta be apples and peanut butter sandwich. always hits the spot.

Food Tattoos?

my next piece (tatt #10) will be my fav fruit...a giant red apple on the back of my calf. i am also tossing around the idea of a portrait of st. honore and a replica of the sugar stage scale on a taylor candy thermometer.

Bring PB&J up a notch!

I am a HUGE HUGE fan of Sunflower Seed butter with bananas and unfiltered wildflower honey on whole wheat. The sunflower butter is amazingly good and balanced with the sweetness of the honey.

out on the town for thanksgiving!

We hit up Angelica Kitchen on E. 12th between 1st and 2nd ave in Manhattan for their 5 course Prix Fixe Thanksgiving Feast. Its the only day during the year that they do the prix fixe, but it was amazing. It started with pickled veggies and a turnip pate with toasted flatbread, then next was a pumpkin bisque with toasted pumpkin seeds. The salad course was a mix of apples, figs, sliced radish, and I think fennel over baby greens with a balsalmic dressing. There was a choice between seitan & acorn squash or a wild mushroom tamale for the main course. I opted for the tamale and it was amazing! Chanterelles and other 'shrooms with sweet corn masa, pinenuts, tomatoes and a side of cooked beans! The seitan was served with cranberry sauce on the top and both entrees came with kale. The dessert was a choice between pumpkin pie, a poached pear, or a chocolate torte. Since it was thanksgiving and all, there's no way i couldn't get pie! It was SCANDALOUSLY good and served with an orange cinnamon whip. Before we left, they gave each of us (and there were 4 of us) a teensy bag of pumpkin seed brittle with a 'thank you' note attached! I'd go again in a heartbeat.

Serious Sandwiches: The Ideal Thanksgiving Leftover Sandwich

Personally, I like something sweet before I go to bed...even if it comes mere hours after grazing, then feasting, then nibbling, then desserting, then nibbling again (i.e. putting away leftovers). Being a semi-veg, there is no turkey that crosses my path on Thanksgiving, but there's a plethora of other things that could make the best sweet leftover sandwich. Start with a good brioche, then add some well roasted sweet potatoes. Its even better if the potatoes have been roasted with pumpkin pie spice or just plain cinnamon & nutmeg. On top of the sweet potatoes goes steamed fresh sweet corn. We always had corn at Thanksgiving when I was a kid. We also always had bowls of honey roasted pecans, peanuts, and walnuts at tables throughout the house, so throw a few of those on there too. If you're feeling extra decadent, a few marshmallows or maple syrup wouldn't hurt the inside of the 'wich before you close it. Use a bit of butter to toast and press the sandwich and heat the potatoes and corn back up. Its rounded out by baked fresh cranberries...which is just something I like to do when the season arrives on a weekly basis. Your belly is warm and your sweet tooth is satisfied when all the pie is already gone.

Juniors Bakery in Times Square. They have a Strawberry Short-Cheesecake that looks INSANE! Basically SSC wrapped in a blanket of cheesecake.

What do you do with fresh corn?

I mix it with cooked cubed (or mashed) sweet potatoes. You could even use butternut squash! Toss on a little cinnamon and you're good to go.

I also steam it, then cut off the kernels and then brown them in a dry skillet. Let them sit when they're done and using the same skillet, stir fry a tri-pepper and onion blend with some paprika, pepper, and chili powder. Once that's near done, toss the corn back in the skillet along with some mushrooms and (in my case) veggie crumbles. Put it hot onto a bed of greens, top with guacamole or green salsa and sour cream and you've got a southwest taco salad!

i like to listen to alex jones' podcast. nothing like a little conspiracy theory to go with that spaghetti. creedence is great to cook to as well. i find it interesting that so many people like to listen to loud and fast music while cooking... i listen to that stuff constantly, but when i'm in the kitchen, i wanna get zen, not get amped.

as for classical: some of my fondest childhood memories are spending time with my mom while she cooked dinner listening to vivaldi. i used to dance around the kitchen to the four seasons.

But I read somewhere that if you truly enjoy the food you eat, even if it's "bad for you" food, your body doesn't absorb as much fat or "reject" the food, or something like that, so I feel less guilty about it now.

I'm an avid Indie rock fan, but in the kitchen it's downright depressing! When I cook it's gotta be the oldies, Freda Payne, the Jackson Five, and I totally agree about the "Heard it through the Grapevine"! Also, whenever I make meatballs I pull out the real classics, Dean Martin, Frank Sinatra, and other random Italian love songs my nonna used to play while she cooked! I also wear my Sicily apron, it's this whole process.
