Probably simple roast chicken with veg- usually a combo of potatoes, onions, garlic, carrots, cauliflower, etc.. Any sort of chicken with a bone in it and some skin on it!

Shredded, then cooked into a roasted poblano crema via Rick Bayless. Slap on a tortilla, roast with some cheese on top, whatever. Or just shred and throw in a taco, let's be honest. :)

I tend to cook 6-7 chicken thighs on the weekend, and then just grab and go at night.. Along with pickled red onions I can use the chicken for tacos or a salad, and make rice or quick mashed potatoes if I just want the whole thigh or whatever.. Easy prep, not much to clean up = win.
