12 Hot Dogs That Haunt My Dreams

Wow, I'm kind of upset you've never visited the Deerhead in downtown Wilmington. It is in your area. When I was a Duponter many years ago we would crawl into the place down the street from the Dupont offices.

My all time favorite dog stand is in Albuquerque, NM. It's on Central Avenue close to Old Town and their footlongs are to die for. I've been eating those tube steaks since 1972.

The perfect burger bun

Here's how to kick up those store bought buns. After you put your meat in the pan or on the grill, split you bun and put it on the grill next to the meat. While cooking, the meat will send a small spray of fat that will cover the bun sitting next to the meat. After you flip the meat, place the bun top on the meat and leave the bottom until you are ready to dress it.

If you want to send your burger into whammy land, thin slice some onions and put them on the grill first, then press your meat into the onions. I always use an 80/20 blend of meat for these burgers because the fat helps lube the onions. Flip the meat and press again. Enjoy.

What I have always found is that if there is one good place in an area there are usually others. I have visited eight of the places on your list, the last being Pink's in L.A. which we visited last year.

I was driving to another hot dog stand, but my wife suggested Pink's and I said ok. I was not disappointed. I knew something was up becaue my wife has never suggested a hot dog stand before. I usually drag her to one of my favorites.

You shoud try the Dog House in Albuquerque. I've been eating dogs there since 1975.

The Burger Lab: How To Make Any Cheese Melt Like American (Almost)

The cheese I use is colby longhorn, the same cheese I have been using for the past 40 years to make cheese enchiladas. This cheese also works well on nachos in the microwave but you want to remove them from the oven just as the shredded cheese melts or you will see some separation.

What is your favorite food gift?

My favorite is a package of peppered turkey jerky from Prasek's Hillji Smokehouse on US 59 south of Houston. I have made believers out of several friends and occassionally one will send a care package when they are in the area because I now live in Montana.

Anything from their meat market is wonderful.

Recipe: Onion Burgers

The Hamburger Inn in Ardmore, OK was built and owned by "Hamburger" Brown. The original was across the street from the current location which was built in the 50's. While he didn't invent the onion burger I can tell you that my friends and I ate there every day of our high school days from 1962-1965. Whenever I am in Ardmore, I stop there for lunch.

One note. You should add pickles to the burger.
