Serious Cheese: On Raw-Milk Cheese

I'm a little late to the party but this is such a fascinating issue I had to weigh in. I am glad to see that a few of you (including Mr. Forest!) jumped in and called danirose out on those goofy sounding claims. I think that as a food lover there is a lot of pressure to be really open - minded about raw milk and raw milk cheese. The feeling that raw is somehow more legit, more European, more sophisticated is hard to combat and can distract and often carry more weight in this conversation (at least in the 'foodie' world) than real hard facts and well-examined arguments about the costs and benefits of choosing to eat raw milk cheeses. I LOVE cheese of all kinds, but I choose not to eat unpasteurized raw milk cheese (aged under 60 days) simply because why risk it? When there are so many things to worry about in the world, why not play it safe? I still get to eat many of my favorite cheeses AND rest easy. That said, I think that raw milk and raw milk cheeses should be made available with CLEAR labeling. This seems like a much preferable situation to the current, where raw milk/raw milk cheese devotees end up purchasing so-called 'black market' dairy. I'd much rather see it regulated, labeled, and above board.

Poll: How Picky Are You About Coffee?

@rheogs - Starbucks coffee is almost unpalatable. I love a rich, dark coffee, and I have nothing really against Starbucks as a company. However, their coffee is downright burnt - whether it's the beans (which I think is less likely) or the fact that it is brewed in a crappy metal brew-thingy and then sits in those super hot metal containers (more likely), somewhere down the line the stuff basically always gets burnt. I was raised, like a good little portlander, on stumptown and the like so I do appreciate a good cup of coffee and Starbucks does not offer that.

Poll: How Picky Are You About Coffee?

Man Vs. Food: Gluttony or just good TV?

I'm glad so many people feel, as I do, that shows like man vs. food are such a load of junk. I find it embarrassing that people watch this indulgent and ignorant sort of thing - same way I feel about eating contests.

As for the above commenter who finds the sentiment that wasting food is bad to be 'banal', I'm sorry, but when there are people who are going hungry here in our very own country, it is important to be weary of wastefulness in the kitchen.

Is eating Organic Food worth spending double the money?

I am so shocked that there are people here who say that organics aren't worth it. They are imperfect yes, but it IS in fact quite regulated- much more so than any other words people throw onto their products like "natural' etc. Even 'cage free' isn't much of a comfort when you dig down into what they can get away with doing to those chickens and still call it 'cage free'.

Organics are worth it. Period. Even if it's industrial organic, it's still the best line of defense you have shopping at a regular fluorescent grocery store against all the scary things that are out there in the food system today.EASY.

ick. Sooo much frosting, and the cake is so often just sugary and dry. Cake cake is so much tastier, I really don't get the cupcake thing except as an excuse to eat a bunch of frosting.

Side note about the name- this restaurant is pronounced Le (the french 'luh' sort of way) and then just pigeon, like "pigeon" the good old american way. just a side note, since I noticed that little discussion of it above.

why does it need a label?if you're a chef, you're a chef. If you're not you're not. Maybe you're a food writer? or, if you just love food, just be a person who loves food? I don't understand the need for this made up category....

Iced Coffee Roundup: McDonald's, Starbucks, and Dunkin' Donuts

I love the assumption that iced coffee has to have milk (this one was milkier than that one). At Starbucks at least, you can add the milk yourself, which makes it seem kind of odd to sort of compare the 'milkiness' of these various iced coffees. And the McCafe crap is such a joke. It's like milky baby bottles for grownups. blech.

But yeah, in this day and age, most people in any sort of town/city has a local cafe that does it better than any of these guys. And if they don't, just order beans from Stumptown or someone and do it yourself.

Toro Bravo, Pok pok are great suggestions! Also, Podnah's Pit is a MUST DO brunch spot. Seriously. Their biscuits and gravy are the one thing I miss about Portland Food on a regular basis. Nothing in New York has even come close. Don't miss it!

Also, Ned Ludd and Beast are two places whose food really sums up the whole Portland aesthetic, and I'd be sure to go to Ken's Artisan for fantasic wood-fired pizza.

Your Starbucks/Cafe order

interesting- so much fat and sugar. with a few fat-phobes (non-fat) who are nonetheless okay with ingesting HUGE amounts of sugar thrown in for fun.

I take my coffee black, with half and half. as a portland native, i'm find nyc to be a touch town for coffee, so unfortunately I end up at starbucks more often then i'd like to admit.

How do you eat for a week for $50?

I live in New York, and cheap is completely possible! Boyfriend swears by ramen, and though I do not necessarily endorse that, it curbs his seemingly insatiable hunger which helps out. Staples for us are : canned tuna, canned tomatoes, pasta, vegetables, lentils. Trader Joe's for expensive stuff that we go through a lot of like PB and Olive Oil.

I'm a getting an MA in food studies right now and have certain ideas about cheap food-- mainly that food shouldn't be cheap, especially meat. This means that we don't buy meat very often, but when we do, we don't center meals around it, we use it as a condiment/flavor enhancer, which makes it last. Like bacon in carbonara for example- it absolutely makes the meal, but you use only a little.
