The Food Lab: How to Roast a Whole Suckling Pig
@Kenji- What are your thoughts on cooking the pig "back up" "sitting position" directly on the metal oven rack? Mine is pretty sturdy and I'm prettly sure it can handle the weight. . Thinking of lining it with a few layers of foil as I'm not sure it would fit this way with the two overlapping sheet pans. Any foreseeable problems? Thanks
