Help: Deep fried turkey not crispy
I haven't tested the oil with a different thermometer yet, but the instructions for the fryer have me heating it to "400 degrees" and cooking for 3 mins/lb plus 5 minutes. Unfortunately since that's the highest setting the fryer has, I'll probably have no choice but to try returning it if it's not actually getting that hot... : ( I guess for this year I could try 1stmake's suggestion of egg whites.

Ok, I checked the temp (without any food), and when the unit says 400 degrees, it's actually about 380. Warranty's run out, so my only option is to live with it or pay $40 to get a new heating unit thingy. : ( If they can't get the part to me by Thanksgiving, I guess I'm just going to cook the bird for longer. Any suggestions for how much time to add?
