Not quite "double", but a savory northern Chinese dish I love is twice-cooked pork. Very spicy and belly-warming.

Though he doesn't cook anything in the movie, I can't help but think of Chef in Apocalypse Now, who protests loudly that he's not a chef, but a saucier.

where are the cooks in my generation?
Sadly, I don't think there's a way to ignite a passion for cooking in someone without being preachy. I know exactly one non-cooker who was "converted" to cooking: he was suddenly broke after getting laid off and subsequently dumped by his girlfriend.
I'm 30 (most of my friends are 27-35) and I find that the people of "my generation" value their time over everything else, money included. Anything that takes time (whether it be cooking, cleaning, laundry, etc) is put at the bottom of the priority list, especially since you can often pay to have them done for you. Asking these time-starved people to cook is asking them to change their life priorities -- not an easy thing to do.
They may not end up passing on cherished family recipes like our grandmas, but they also didn't have to live through the austerity of the Great Depression. They'll probably pass on their "heirlooms" of designer fashion and furniture.
Recommended height for cutting surface?
According to my Architectural Graphics Standards (the bible of numerical data for architects), the ideal height for kitchen counters for women is given as 34-36 inches above the floor. This is based on an average height for women at 5'-5.5". Their ideal counter height for men is 36-38 inches above the floor, based on an average height of 5'-10".
They also indicate that work surfaces for "heavy work" (the example given is ironing) could be lower than this ideal counter height while surfaces for "delicate work" (no example given) could be higher.

Does anyone know how to make pork fried rice?
I'm Chinese and I agree with most of the above comments.
- definitely start with day-old rice
- marinate the pork beforehand, overnight if possible
- get your pan/wok extremely hot before adding oil (use an oil with a high smoking point), let that get hot too before adding ingredients
- if you're not roasting your pork, fry it first and remove from pan
- next go your aromatic ingredients (garlic, ginger, hot peppers) for a flash fry before the veggies
- when veggies are softened (wouldn't be long for sprouts), add rice
- make up a sauce: could include soy sauce, broth (useful if your rice is starting to get really dry), oyster sauce, fish sauce and spices (5 spice powder, curry powder, etc)
- add to the pan along with the cooked pork

I absolutely love meyer lemons and frankly prefer them over the regular (Eureka) variety. I made a super easy lemon curd http://figswithbri.com/?p=91
that you might want to try. They are great in salad dressings, as the only acid, or in combination with orange juice or vinegar. At the height of citrus season, I love to make a multi-citrus juice for brunch and include in (varying proportions) ruby red grapefruit, tangerines, oranges and...meyer lemons. The meyers cut the sweetness a little and give more depth of flavor. The zest is spectacular in all kinds of sweet and savory applications as well. Dips, fruit salads, dressings, desserts...you name it. What a treat that you are being given so many. If you made up a bunch of lemon curd, you could give them as gifts for Valentines Day.

My Mom squeezes fresh lemons every morning and stores the juice in a glass jar in her refrigerator and she makes fresh lemonade for all who visit her. Meyer lemons (and My Mom - she's 84) make amazing lemonade. Her recipe: 1/4 cup fresh lemon juice, 2 tablespoons organic sugar, 1 cup water and shake.

Elizabeth W--I know just what you mean! My boyfriend had a tin of those chocolate covered altoids, and every time I would go over to his place I would eat at least 3 or 4 or them. Same with those little York mints that come in the tin. One just doesn't cut it!

Leftover cold anything. Most of the time I like the meal better the next day, but I'd probably feel funny actually sitting down to meal of cold lasagna! A bite from the fridge feels ok...

Mayo, mixed with shoyu, which I will use as a dip with broccoli and carrot sticks and celery and any other vegetable in my line of sight. God, it's so good. Though perhaps something one had to grow up with.
And not nearly as weird, but truly delicious, slices of apple with super sharp cheddar cheese. Heaven.

If there are loads coming, definitely look into making preserved lemons. They are easy to make ,will keep a long time and make a great gift. Here's a recipe for making and using them: Moroccan Lamb Stew.

Lemon Ice Box Pie
1/2 cup lemon juice
2 egg yolks
1 can sweetened condensed milk
Combine all ingredients. Pour into a vanilla wafer crust (or graham cracker crust). Refrigerate. Top with whipped cream if desired. The acid in the lemon reacts with the yolks to firm up the pie.
I sometimes add a little vanilla to the mix, too. Really nice with the lemon.
My MIL tops hers with a meringue made from the two leftover egg whites, lightly browned in oven before refrigerating.

A friend of mine gave me a huge load of lemons last year from his neighbor's tree. I didn't know what to do with them all, so I juiced what I wasn't going to use, poured the juice in ice trays and made lemon cubes. Then I put the cubes in ziplock bags and froze them. Anytime I need lemon juice, I defrost some cubes and viola!

Squeeze any you don't use up. Pour the strained juice into an ice tray or a small container that holds one lemon's worth of juice. Freeze. If you used an ice tray, put in the cubes into a ziploc freezer bag. Keeps pretty much indefinitely, but that's only theoretical since you'll end up using it too fast to find out!
Meyer lemons make the most awesome lemonade on earth. But, because they are so sweet and mild compared to Eureka lemons, Meyer lemonade can easily come out too dilute and/or too sweet. So be sure to start out with a lot less water and sugar than the recipe calls for. Add small amounts of each until the flavor seems right.
Lemon Ice Box Pie
Can't lay my hands on the recipe right at the moment, but I'll post it shortly. Pretty much the easiest dessert you'll ever make (other than a piece of fruit eaten out of hand). Basically, it's fresh-squeezed lemon juice, egg yolk and sweetened condensed milk, all mixed well and poured into a graham or nilla wafer crust. Refrigerate. Rich yet not. Devour.
