Banana Cake Big and Small

I just ate one of these hot from the oven and it was absolutely wonderful. I'm planning to throw in some walnuts next time but see that idea is not an original one. Great minds and all that...

Cook the Book: Ham, Brie, and Apple French Toast Panini

OK that looks so good. I very rarely eat meat and try not to consume all of my day's caloric intake in one sandwich but I think it would be worth it for that one.

We've been making a panini at home recently that I just love. It's roasted red peppers, goat cheese, grilled onions and provolone.

Southern Foodways: Bar Culture in Louisville, Kentucky — An Oral History Project

That's my town. So glad Amy got to spend some time hear soaking up our bar and booze culture. There's more to Louisville than drinking of course but it's a nice component of our city's culture.

Are you guilty of lessipe?

I'd never intentionally leave an ingredient out of the recipe though I have been tempted to just not share the recipe because it's something special I make. But then I can never justify saying "no, I don't want to share because it's mine, mine, mine" so I end up sharing anyway.

Cook the Book: Chocolate Sablés

I don't have a favorite recipe per se but I made chocolate cupcakes from the Magnolia cookbook yesterday and they were really outstanding. So for the moment, my favorite chocolate recipe is chocolate cupcakes from the Magnolia bakery cookbook.

If We Eat Less Meat, Can We Save the Planet and Ourselves?

Re: meat hangover obviously how one's digestive system responds to any given food is very individual but I know that I feel much, much better when I'm not eating meat at all. Even small quantities of meat impact my body negatively. So I don't think the "meat hangover" can only be attributed to portion size. That doesn't mean I don't partake in meat from time to time, it just means I know I'm not going to fee great the day after. Some meat based meals are worth that feeling but the vast majority aren't.

A word for former vegetarians who eat free range meat?

Flexitarian covers most of this I think. It's how I refer to myself. I'm not and was never a complete vegetarian but I very infrequently eat meat and try to only eat humanely raised, free range meat products (and as locally as possible) as I can. Of course flexitarian as a way of eating is open to interpretations on motives, meaning you might eat that way for health as well as or instead of political/farm/animal rights concerns. So maybe something like "ethics motivated flexitarian?" That's a bit wordy though isn't it?

Cook the Book: 'The Food You Crave'

Healthy food? That's a bit of a trick question since just about any food is healthy in moderation. However I'd say that I frequently crave a hearty dish of brown rice and lentils.

Oh No You Didn't: Vegan Eggnog

I'm with Prairie. If you don't like it, don't drink it. No need to make a whole post just to be snarky about someone else's holiday beverage choice. The commercially made Silk Nog is actually not bad. I just don't recommend you tried it as a substitute in an eggnog latte. Soy nog and coffee don't go well together.

Favorite Food Gift to Give

I do boxes with peanut butter fudge, two kinds of home made truffles and cookies. For my vegan friends this year I've started making a vegan variation on chocolate rice krispy treats. Everyone I've given stuff to, even people I know who are quite health conscious, have been quite happy to receive homemade goodies.

Death by Veganism

I'm not a vegan but some very good friends of mine are, as are their two small children. These children have never had any health problems related to their veganism and according to their doctor they are average or above average in all of the measurable benchmarks of child development done by pediatricians.

The problem with Planck's opinion piece is that a lot of what she's saying isn't stated as opinion. It's stated as fact. She's not a doctor, she's not a nutritionist, she's not a farmer. What she is is a writer with the paperback version of her book coming out in less than a month.

"Children fed only plants will not get the precious things they need to live and grow." The translation of this sentence is "It's a fact that every single vegan parent is depriving and engaging in the malnutrition of her child." That's simply not true. Vegan parents can and do take care of the nutritional needs of their children. Do they have to work a bit harder to do it than omnivores? Perhaps but that doesn't mean it can't and isn't being done. Are there crazy vegan parents who don't meet their child's nutritional needs? Yes there are. Just like there are meat eating parents who do the same. Abuse is abuse whether the parents eat steak or tofu.

In most conversations relating to food I usually come down on whatever side is opposite of the vegan position. I come from a family of dairy and beef cattle farmers. But "Death by Veganism" is a piece of sensationalist rabble rousing short on fact, long on opinion and high on book selling intent. Count me firmly on the vegan side in this round.

Equal (Blue) vs. Splenda (Yellow): We Have a Winner

I just got some of the vanilla Splenda to try in my coffee and I endorse it completely. It's very good with no after taste. It took me a while to get used to the plain Splenda in my tea but I have now and don't find the after taste overwhelming.

what % of serious eats readers do you think are from NYC?

I'm currently in Indianapolis (soon moving back to Kentucky). I get the feeling that 75% New Yorkers is a solid estimate. That could be just a feeling though.

Question of the Day: What's Your Favorite Kitchen Tool?

Baking with Dorie: A Seriously Chocolaty Cake

Just wanted to second some of the folks who had problems. I'm an experienced baker. I've made a fallen chocolate souffle cake for years, but thought I'd try something new as my party pleaser.

Had the same problem as most. Baked for 30 minutes, and the middle was 'molten'. Poured back into the pan with relatively little damage, baked for at least another 30 minutes then unmolded. It's sitting in a fudgy puddle on my counter. It certainly tastes fabulous, but I can't serve it to the judging masses.

What went wrong?!

Possibilities:
1) Mistakenly boiled the whole 1 1/3 c sugar with the bourbon to start. So I only added a few tbsp of sugar to the eggs.
2) I noticed that the chocolate had nearly completely cooled half way through the first stick of butter. It took at least 10 minutes to incorporate all of the butter.

Could these be the culprit(s)?

Thanks all!

I would like to make these cupcakes but have a question regarding the amount of butter to include. Are 4 ounces enough? Or should it be 1 stick of 8 ounces???

For breakfast or lunch there's Patachou on the Park. I agree with the recommendation for Yat's. Lots of good food for very little cash.
Yat's If you're concerned about the walk to Mass Ave, take the #17 bus (College Ave).

Thanks everyone, this really helps - especially since my boss won't be able to make it (we get along really well) so I'll be out there alone, and I plan to cure my boredom with some seriously good eats :P

joyyy:

The walk to Mass Ave. would be safe... Downtown Indy is a very safe place. I'll third the vote for R Bisto - hit the website (www.rbistro.com) to find this week's menu. Elements (www.elementsindy.com) is another good place in that area.

St. Elmo is a good place for out-of-towners... you can find a better steak but the history and ambiance are definitely unique. They have an offshoot called Harry & Izzy's that's a little more of a scene and one of the trendy places to go. Peyton Manning is one of the investors and can be spotted there on a somewhat regular basis.

Mikado is a great place for sushi/Japanese (http://www.mikadoindy.com).

Sorry to be naggy, but would it be safe to walk there from the Monument Circle area? I don't mind a 2 mile walk, but I also might be on my own and don't want to risk safety for a good meal - and I'm hopelessly cheap :P

Question of the Day: What's Your Favorite Kitchen Tool?

Wooden toast tongs - used every day - great for getting mini-bagels out of the toaster.

Also, thick rubber bands and clothes pins for closing all those vegie bags, cereal bags, etc.

Nonstick egg skillet.

I made your cake the other day, when your book arrived and inspired me to "get busy". The previous week (see my blog post: http://www.boscoethecookiedoctor.com ) I endured hellacious dental problems, and your "smiling toothy" picture on the binding was the soothing reassurance I needed to get back on track. The cake was outstanding. Thanks for your inspiration. I love your recipes.
