I made this last night and it was really, really, really good. So good that i went out today and bought more mangoes and cheese to use up the rest of the dressing! Highly recommend this.
great mangoes are available year round? where are you shopping? I find it difficult to get a good/decent mango even in the height of summer in NYC. They're usually green and hard as rocks or on the other end of the spectrum -- shrivelled and half rotten.
