Cook the Book: ''Wichcraft'

I don't see many sandwiches that conjure spring in Appalachia, so: grilled ramps, wild blackberry-thyme preserves, and fresh farmer's cheese.

The End of Apples

Gold Rush apples are so incredibly good. Moving to North Carolina has been wonderful, but I still dream about the Pennsylvania Gold Rush apples I enjoyed when living in the Mid-Atlantic.

Do the Halseys market their cider outside of their immediate area?

Simultaneously roast, saute, and build a salad with a single set of fresh veggies, fruits, and a protein. That approach allows for a diverse spread of at least three courses from only one prep/chop session.

Oh, peel and crush your garlic before you do anything!

Southern Foodways: Lucky New Year's Dishes

It would not be New Year's Day without black-eyed peas and greens. This year I made something a little non-traditional, however, in the form of black-eyed pea, kale, and chorizo soup spiked with garlic and chipotle. We had it gumbo-style with a quinoa pilaf tossed with olive oil, sea salt, and fresh cilantro. I hope it brings increased luck in proportion to its increased heat!

My Ten Most Memorable Bites of 2007 (Outside New York): What Are Yours?

Wow, Ed, great list. You are one well-traveled serious eater!

I concur with the Parkway Bakery judgment. They craft the platonic ideal of the roast beef po'boy.

I'll just mention one bite that really stands out. À Côté Restaurant, Oakland, CA: freshly wood-fired flatbread with local figs, gorgonzola, and thyme-studded sausage; accompanied by a strong Mc Chouffe Ale. It was the kind of bite that reminds one of life's immense potential for pleasure.

Mike's Deli in Chelsea, Michigan makes the best sandwiches! Swank on the Grill is my favorite: bacon and sharp orange cheddar cheese with honey mustard and raspberry jam...grilled to perfection on challah bread and served with a giant pickle. MMMmmmmm...They should make that one!
