What do I do with grits?

@14japonica, not sure I agree. I am from South Louisiana and occasionally topped my grits with cane syrup as a child.

What do I do with grits?

"EAT THEM!," says the girl who has eaten grits all her life. :)

Here are my favorite ways to eat them...
1) Lots of butter, topped with soft fried eggs.
2) Sharp cheddar cheese, milk, bacon, sweet roasted corn, topped with grilled shrimp, Creole seasoning, lots of hot sauce. I would write the recipe here, but I just wing this dish.
3) Lots of butter and Steen's cane syrup.
4) With ham and red eye gravy (a coffee-based gravy)
5) With grillades
6) Make up a batch of cheese grits (any cheese you like) pour into a pan, fridge overnight, and then coat with flour and fry up as gritcakes. These also make great vehicles for appetizers in place of bread or crackers.

Sounds like a terrific read. Also, dying to know if they've had to battle the FDA regarding slaughter of their animals for sale via their CSA. Gonna go check it out.

I'm with richopp. Tried a couple bites of a JITB burger once and just felt sick. I couldn't eat any more of it.

@Hawk Krall - it is definitely crazy! Crazy good!

Although I have eaten at Cochon Butcher several times, I have yet to try the housemade hot dog at Cochon Butcher. My friends have raved about them, though.

Beck's Prime in Houston, TX has a tasty Kraut Dog served as a sandwich w/ hot dog sliced in half lengthwise and crosswise and put onto a roll.

@jpeckjr - mmm. Cheese and bacon grits. YUM!
@bonjourpeewee - haven't had it since I was a kid, but I loved fried garlic bologna sandwiches with tons of mustard on white (Bunny or Evangeline Maid) bread.
@lapsangsouchong - Put me down for Popeye's biscuits. I load up on those every time I go home to visit my parents in Louisiana. No Popeye's to be had where I live and that is a good thing!

Also:
Hubig's chocolate and lemon pies
American cheese and Steen's cane syrup sammiches; oh Steens and peanutbutter sammiches, too!
I can eat an entire bag of Zapp's Tabasco or Crawtators potato chips in one sitting.

Today, at the grocery store..

@moonlyt - I've had my ass grabbed at the grocery store -- all were by my husband. First time, he was out running errands on his way home from work and knew that I would be stopping in at the grocery store on my way home from work. Since the store was on his way home, he just popped in there. I was in the produce section when the pinching happened. I turned around, completely startled and he's just dying laughing! A few of the people around us got a chuckle out of it, too.

Second time, he'd dropped me off at the store while he ran to Home Depot for something. Even though I knew he'd be done before I was, I had not been expecting the ass-grab. Let's just say it's a running gag now!

What do I do with excess green onions?

I've been thinking of doing something similar to what hotnpopin said. Once I get them dried/dehydrated, I want to grind them into a powder and see what that's like.

fresh cranberry beans!

My grandfather grew a variety of cranberry beans when I was growing up. My grandmother and mom cooked the beans with the trinity, garlic, a bit of smoked ham, tasso, or salt pork until they were creamy. Served them over rice or with French bread on the side.

We always tossed the pods in the compost pile. (Sorry.) Great times shelling those beans on the porch with my grandparents. As a child, I was utterly fascinated with all of the pretty pods and beans. :D

What is your Favorite Rice?

For me, it has to be Louisiana grown extra long grain or popcorn rice (like Mossy Bayou) when eating the Cajun food I've grown up with.

When I'm not eating gumbo, red beans & rice, or jambalaya, I stick with brown rice for health reasons. I've found a great brown basmati that I really love.
