Unfortunately, U Lucky Dawg is closed.

Everyone in Chicago has their favorite place, but many of us like Poochie's at 3832 Dempster St. in Skokie. Cooking with a Friend: Bun Cha and a Spring Sauté

My prediction: Bun Cha will someday take the West by storm. The fact that it's a Hanoi-based dish would seem to be the primary reason it hasn't done so already (Vietnamese food, at least in the United States, is naturally dominated by Southern dishes). Cha Ca, which can be transcendent on a good night at Cha Ca La Vong, is another Hanoi dish that is almost impossible to find in the U.S.

A nice photoblog of Bun Cha Dac Kim, which seemed the most popular place for Bun Cha when we were there in 2004. At lunch, they keep sending you up this narrow, vertical temple of Bun Cha, higher and higher, as each level is usually packed with very happy people.

I adore Andrea Nguyen, but Mai Pham's recipe for Bun Cha seemed more authentic to me. (The other day I saw, Bobby Chinn's take on the dish, which looked intriguing, but I haven't tried it yet.)

I dunno the use of celery salt on Chicago Dogs might go back to the 30's.

Thing about hot dog history is that there's not a lot of hard facts or information on record- it's a mix of marketing, folklore, and family memories, that a lot of people don't necessarily think is important to preserve.

The mystery is part of the fun of uncovering the origins & evolution of hot dog styles, but I don't think narrowing down the "best" or the "first" is really that important..what's clear is that influences have crossed the country and even continents back and forth in various directions, and almost every hot dog variation adds a piece to the ever-changing puzzle.

I'm going to call B.S. on the celery salt use in New England being a result of the chicago influence. "They sprinkle celery salt on the dogs at Flo's in Maine..."

Growing up in Northern New England, at most any roadside hot dog stand you could always find celery salt as one of the condiments. That's going back something close to 40 yrs.

Ya know, I visited Chicago last month for the first time in my adult life, and since we didn't have a car, we went to the closest place to our hotel, which turned out to be Portillo's. It was delicious, as was the chili and cheese served on the side for the fries. But it did not have that irradiated green relish we've always heard about. We didn't miss it.

Um, it's only 9 am here and I am now craving Bun Cha Ca ... thanks a lot. ;) We actually have a very good rendition here in San Francisco at Bodega Bistro. I actually like it *better* than the one that I had at Cha Ca Va Long, but I don't know if that was a fluke, or if it is because Bodega backs off on the oil a bit.

Thanks for the other recommendations -- I'll check them out.

That looks incredible. Seems like everyone had a blast....not too many turned off by the "Swine Flu:, huh? What a load of crap. I bet the Pork industry will have to do a bunch of PR about it now...they should have just called it H1N1 from the beginning.

I love hot dogs. I really do. Only the beef ones, really. Carolina reds are quite popular around here, but all of that red dye makes me weep. I'll take a whole kosher pickle on a hot dog any day. The more the merrier. I prefer a crisp, fresh good ol' cole slaw & some hot, spicy chili but I'm digging those variations, for sure. Bulgogi is totally on my to-do list now.
