i've never been one to eat meat substitutes... but there is something about these "chicken nuggets". I buy them in Chinatown in NYC... They're super good and I bake them in my toaster oven. I guess they would be perfect with your favorite buffalo spicy sauce...

Welcoming Treat

how about some carrot mini cupcakes... you can leave the creamcheese frosting out and serve them in little cellophane baggies.... Super cute.

Or maybe some brown rice krispies treats... I make mine without marshmallows and use almond butter instead. They cut well into individual servings and are always very welcome.

Or even some individually packed cranberry preserves... maybe something nice to add to their Thsnkagiving spread. or to eat over ice cream too.

make tea with the lemongrass... I usually only use the grass blades, but the stalks will work just the same. It's a great digestive tea for after-dinner...

I guess you could also use it in some thai cooking application, but that's not my forte.

I need a vegan recipe or two for Thanksgiving

My recipes include cheese, but you can certainly substitute the cheeses mentioned in the recipes for vegan/non-dairy versions from the healthfood store. I favor SOYA KAAS cheeses... they're a bit expensive, but they taste good and melt well. Also Tofutti cream cheese and sour cream... and Silk soy milk and non-dairy creamers.

Here are the recipes:
Butternut Squash Mac and Cheese - the flavors of fall in an easy to handle package. You can also make it with pumpkin...
Vanilla Maple Carrots - just omit the butter and use a canola alternative...
Vegan White Lasagna with Almonds and Spinach - this is a tried and true recipe...
Cranberry Preserves
Roasted Sweet Potatoes with Onions
Coconut Tembleque - this is more Xmasy, but it's vegan, super easy to make and I am sure your friend will like it.

Baked Pasta and 4 Cheeses .. this is super date appropriate...
Blue Cheese Mac with Walnuts you can actually whip this up stovetop in less than 20 minutes... and reheats super well.
And these Broccoli and Cauliflower Stuffed Shells are to die for...

What is your stance on "tipping"?

I usually tip the custumary 15%, but I tip very well (25% -30%) when I feel service has been outstanding... But have been known to withhold tipping when service was lacking.

I am a firm believer that a tip is not something that must be expected, it should be earned.

Thansgiving menu - I think I'm missing something...

you need something fresh...

a salad is not lackluster. It all depends how simple or how ellaborate you want to make it. I like a sort of Nicoise salad... I make it without the tuna, but I include everything else - lettuce, tomatoes, green beans, roasted peppers, carrots, onions, radishes, boiled potatoes, etc.

In keeping a bit with your Mediterranean flavors of the rosemary chicken, you could have a version of caprese salad adding romaine lettuce to it or even a fancier version of a Ceasar salad with a citrus ceasar dressing.

I assure you, something fresh will be very welcome and balancing to all the starchy sides you'll be having. Bon Appetit...

And now the cake dilemma...c'est finalement l'ennui gateau

you know what I did once, and looks really pretty... a Cranberry Triffle. I bought pound cake (but you can make your own if you'd like) and cut it up in cubes, did my very own sweet whipped cream and my own cranberry preserves sauce and started layering... if you have a big triffle thing, it looks awesome. I did it in big wine glasses for individual servings.

And for added flair, you can drizzle some Cointreu or Grand Marnier over the pound cake cubes...

i am trying again this year to succeed with a Pumpkin Tres Leches cake... i make a pumpkin pound cake and soak it in a mixture of evaporated, condensed, and fresh milks. May even also try some coconut milk in there too... I am soo sorry I do not have a strict recipe... because last year the cake eneded up a bit too dense and the milks were not absorbed super well... so I am tewaking it again this year.

but if you're interested in a more concrete recipe, let me know where I can email it to you...

If all else fails... we'll always have the Ghirardelli's Brownie MIx from Costco... it's devine!!!!

Real fruit juices are OK - and what I mean by that is real juice made by yourself in a juicer or blender... without added sweeteners or artificial stuff.

The added sugars and colorants is what make the store-bought fruit juices not so healthy anymore...

Has anyone had success with a Tofurkey?

if someone decided to stop eating meat, amongst those turkey, why even bother eating something that tries to resemble the real thing, but most likely will not even be close??????

my advice, skip the tofurkey alltogether and enjoy Thanksgiving with something delicious that celebrates the season and celebrates the true holiday by sparing the life of a real turkey...

I believe the turkeys will the very thankful.

No problem... thegourmetgal. Blue cheese is also a newly acquired taste for me too.

I usually buy here the Danish Blue just because it's what's more readily available. And I agree, when compared to what I sometimes eat in restaurants is milder or lackluster (however we would like to call it)...

I have a wedge of Rosenberg in my fridge... but I have heard that Point Reyes is a mild American version... if your spermarket has it, I would try it. To a newbie like me, I have integrated blue cheese into a few recipes lately with much success, if you husband is a fan, he might enjoy them too...

You could of course do a three sisters stew, the concept of which is an obsession of mine lately. Just leave out the sausage obviously and use veggie stock or water in place of the chicken stock. You could also do a three sisters saute with butternut squash, beans, and hominy combined with peppers and onion to make a pretty substantial side dish.

What is your stance on "tipping"?

I live in NYC and tip an amount that is double the tax (always rounding up to a whole dollar amount). Coins are tacky. Service jobs are hard, physical (and often emotional) work. I get genuinely nauseated when someone tips less than 15% for average to great service. At my favorite places, I have tipped 50%.

If you frequent a particular restaurant, tip well. It's worth every penny. Remember dining out is not just about feeding your face. It's an experience.

Don't try to justify your bad decorum. If you're too cheap to tip the recommended 18% pre-tax gratuity for decent service, for the love of gastronomy just go to supermarket and buy a frozen TV dinner.

A Completely Crockpot Festive Meal

If you are serious, I have found a slow cooker I am in love with.
It is the Hamilton-Beach Set and Forget 6 quart slow cooker.

I love the options on this baby. You can set the time in half hour increments; you can set it to turn to warm when a roast or chicken reaches a certain temperature with the thermometer probe; and it seems to cook more like the older crockpots, meaning less hot than many of the modern ones.

But, that's my favorite of the ones I own. A standard 3 1/2 quart old style Rival still does the job just fine. :-)

what do i do with...

I make a flavored simple syrup with lemongrass, ginger, and lemon as the start to one of my favorite cocktails. Equal parts sugar and water (2 cups each generally works for 8 cocktails), zest of lemon, cut said lemon in half and throw it in there, stalk of lemongrass cut in half, wacked with my back of my large asian cleaver just to bruise it, and rough chopped, and a roughly chopped large knob of ginger (a palm sized piece.) Bring to hard boil and leave at boil for 5 minutes. Kill the heat and steep for 30 minutes. Combine vodka, lime juice, and the syrup for a killer cocktail. I might try using the lemon granules as a cocktail glass rimmer.

@ allot and mollykate... thanks. you wont be sorry. I generally make a double batch making sure to use whole milk, generous salt and pepper as well as a smidge of nutmeg. Off the heat I add in a few handfuls of good aged romano, give it a wisk and call it good. I let it cool for a good 15 minutes before I assemble the layers so it doesnt overcook the pasta.

@ ChefRobert...dude, Im not sure who you think you are dealing with, exactly. You can add "chef" to the beginning of any name you want and that doesnt make them one. You most certainly DO NOT need ricotta for a lasagna and bechamel is most certainly NOT better suited just for mac n cheese. (Uhhhh, any facebookers out there want to re-itterate this comment by my foodie pics on my catering/personal chef page??? I believe there are quite a few photos to substantiate my comment). THAT being said, the texture of bechamel is far more appealing than that of ricotta. You can make ricotta in 10 minutes but why in the hell would you want to? Its wet. Its gross. Its generally flavorless. Bechamel makes a delightfully creamy addition between the layers and when ladled on the final noodles as the topping, browns and gets that oh so cheesy deliciousness that everyone loves.

Also, while I enjoy TK very much, there are no onions in sauce. EVER. Can I get an amen from the dagos and waps in the room? We are straight off the boat, baby.

Bechamel rules. Onions and ricotta do not. Period.

I agree, honeycrisp. I definitely judge people based on their tips. I would kick a cheapskate date to the curb, and I avoid dining out with friends whose tipping is crappy, because I am filled with anxiety when the check arrives.

My boyfriends mom puts out pitted dates, stuffed with either cream cheese or peanut butter, rolled in sugar. The ones with the cream cheese are mmmm.

What is your stance on "tipping"?

Don't you think waiters would like a guaranteed wage? The tipping system sucks. And the tips I got were then dispersed to the bartender, the host, the bussers, the dishwashers and the cooks. And those people made above minimum wage. I tipped them from my tips because it would insure prompt service when I needed it. We weren't required to tip them out where I worked, though I've heard more corporate places require it. We all took care of each other. So a bad tipper is known restaurant-wide, or even city wide because we all hung out together. I found that most people were generous, that 20% to 25% was common. I tip at least 30% because it's only a few extra dollars on top of what I was going to spend on the meal anyway. It's not a big deal. I find that commentors who get worked up about the tip system are generally trying to justify their actions. I would never date someone who calculated a tip down to the percentage before tax. It really tells me a lot about that person.
