Pitaya! Oooh, they bring back so many wonderful memories of my time in Leon, Nicaragua. I never ate the fruit there--it was always prepared as an ice cold, super refreshing drink. How to Make Cold-Brew Iced Coffee

I worked at a Dunn Brothers, and we coarsely grind four pounds of beans for four gallons of water, let it sit room temp for 22 hours, then take out the filter. Crazy smooth delicious results. So, for a home cook, that easily translates to one pound for one gallon (which gets expensive, yes) ratio-wise. Some easier math!

I'm allergic to shrimp, but I would so love to make kimchi--@droostring, do you not add shrimp because of taste preference, how you learned to make it, or allergies? Does anyone have substitutes or nice additions that could mimic or enhance kimchi that doesn't have shrimp?
