'Top Chef' Alum Brings Burgers, Fedoras to Capitol Hill

I'd like to see a good Aussie Hamburger which ALWAYS has SLICED BEETS from a tin. In Sydney we always have standard burgers: fried onion, lettuce, tomato, beetroot (Beets) In some joints you have to ask for them. Extras include Fried egg, tasty cheese & fried bacon rasher. When I make one at home I have an open burger with mayo on one side, lettuce, tomato, beet(root),fried egg with melted cheese, slice fried bacon & squirt of tomato sauce-Other side is mayo, Avocado, tomato, large pattie with fried onion on top & another squirt of tomato sauce If Spike coud make me one I'd definitely eat at his place or any other Top Chef's eatery

Chicken Liver Pate, hard boiled eggs or no?

I've made it both ways I prefer it without the finely chopped hard boiled egg as I like a SMOOTH chicken liver pate

What's your favorite simple sandwich?

I had just come back from living in New York for 7 years, moved into my girlfriends home who was into a "no meat" phase because of her two young boys Anyway Vera & I passed a tiny health food store & I had the "sanga" - sandwich It was avocado spread onto multigrain bread, then it had sliced hard boiled eggs and alfalfa sprouts on top. 29 years later I still hanker for that sandwich

What's your favorite simple sandwich?

Nice, soft, chewy plain bagel (don't like toasted/crunchy/dry bagels), grilled smoked salmon, and mayo.

The best version of the above is sold at the shop couple doors down and includes bacon, lettuce, and tomato. Not even a fan of bacon, but the flavors blend so beautifully. Dammit, wish they were open today.

Guess it's back to sour dough bread, sour cream and onion potato chips, and french onion dip sandwich.

What's your favorite simple sandwich?

I'd have to agree with the fried egg contingent cheap white bread toasted just enough to make it warm, and a fried egg with the yolk cooked hard and a slice of american melted on top. also helps if you schmear the bread with a little ketchup. I used to eat those back in the day when we were lucky to afford the ingredients. lol We also used to by pulled pork from the grocery deli, after 9pm when they marked it way down to get rid of it, we'd also buy a stale loaf of rye bread and lightly toast it add pulled pork and there was dinner.
