your dream (foodie) vacation?

@tatinak - agreed. I would take it nice and slow. Gotta give time for the stomach to digest.

But my trip would include occasional stop-overs for some liposuction, tummy tuck, body cleanse that I will certainly need.

Booze (generally vodka) = all-purpose usage. For anger, depression, stress, joy or boredom.

Cook the Book: 'Real Cajun'

Mom would treat my brother and I to a Wendy's meal once in a while. The Wendy's had the "old-fashioned" decor with the newsprint tables and faux tiffany hanging lamps. She would split the fries between my brother and I (to keep us from fighting) and I would proceed to arrange them in size order before eating. Fun times.

Cook the Book: 'Beyond the Great Wall'

It was the fall of 2005 and I was wandering the Sol district of Madrid, Spain, tapas bar hopping. I peeked through the window of one and deemed it worthy from the clientele (filled with locals). I eased my way to the counter and tried to make sense of the chalk board specials. I had stupidly forgot to purchase a phrase book and in my youth, chose to take French instead. The gentleman next to me was tucking into a plateful of fried something-or-other. It looked like fried cauliflower. My attempts to speak to him in English failed but my drool (on my pathetic looking face) must have moved the man enough. He took a toothpick, lanced a piece and handed it off to me with a hand gesture "go ahead...eat up". I chomped down and to my surprise, it wasn't cauliflower. It was soft and creamy but I knew it wasn't fried cheese. The man waited for my response which came in the form of a smile and a thumbs up. Playing food charades to communicate what I'd just ingested, he then placed his finger to his temple and proceeded to moo. I had just eaten fried cow brain and loved it.

Beets on a Burger

I had my first beet-on-a-burger in Sydney too. Just a few thin slices like tomatoes. It gave the burger a sweet, earthy flavor. I don't add it to my burger often because I usually don't have beets on hand.

But the fried egg on a burger? Oh heck yes. I do that too often. Ask my arteries.

Notice that there are gaps in the line-up. Which means that a few souls actually had it. Likelihood of their survival is slim...so folks...there must be a few openings at Google. Right. About. Now.

Question of the Day: What cuisine can't you stand?

I agree with the many comments about dismissing an entire culture's cuisine. There are many foods that don't translate well outside of its hometurf. Additionally, cuisine can change (such as Americanized chinese food) to adapt to available produce or palates of the market being catered to.

Personally, I see food...I eat food. I'll give anything a shot. I don't believe I've encountered a cuisine which I didn't like.....

From Talk

Question of the Day: What surprises your friends most to hear that you make yourself?

Soy sauce chicken (or duck, gizzards, etc)

Most folks go out to Chinatown to buy soy-sauce chicken but I make it at home. We have a vat of homemade sauce that's been unchanged for 4 years. The batch before stayed with us even longer but we had to dump it since we were moving.

From Talk

Question of the Day: Gas, electric, other?

Gas. No contest. If I could, I would have restaurant levels of BTU's going. And since I cook a majority of my dishes with wok, I find an electric stove can't heat and sustain the wok properly. The gas just hits the middle and rides up the sides. Beautiful sight.

@ Lou. Ooooooohhhhhh. Can I play with your stove?

Lunch spots: Flatiron District

I use to work on 24th and Madison.

I second the Mayrose mention. You also have Tabla & 11 Madison Park there.

There's a slew of great places down Park Avenue South and around the Union Square area (City Crab, Angelo & Maxie's, French Bistro, Zen Palate, Pipa, Olives - at the W Hotel).

Not a lunch place (they do dinners only), Charlie Palmer's Kitchen 22. I adore this place.

From Talk

What's your favorite food that is filled or stuffed?

Plain buns (man tao) stuffed with roasted duck, a smear of hoision sauce and some spring onions.

Pork chops stuffed with an apple & raisin stuffing.

Jumbo shrimp, stuffed with lump crabmeat mixture (crabmeat, breadcrumbs, egg, celery salt, etc) and finished with a garlic cream sauce.

Fried tofu (that's been stuffed with a pork and shrimp mixture).

Question of the Day: What's the best food song?

Why oh why did "Les Poisson" from The Little Mermaid pop into my head?!?!?

Question of the Day: What one ingredient do you never skimp on?

Vanilla. Why bother making a dish if you're going to use extract??

Where can I find Dragon Beard candy in New York City?

At first glance, you think you're looking at a cotton ball. But upon closer inspection, you'll see the tiny strands of sugary thread. The "beard" is smooth and sweet but not overpowering. It's texture is like biting into a frosted mini-wheat...but certainly more delicate. The real goldmine is the filling and that's where the flavor lies. I believe I had one with coconut and sesame seeds. Heavenly. Don't hold the candy too long. The heat of your fingers/hand will begin to melt the strands together. Not that it doesn't taste good but it loses a bit of that delicate texture since the strands begin to gum up.

I had it (and purchased boxes of it) at the airport on my return trip back to the U.S. Except...I can't remember if it was a return trip from Japan or Korea.

Watching them make the threads, roll up my candies and box them was awesome.

Chicago! Went for a long weekend, ate @ Alinea, Tru and Boca. Had tasting menus @ each one. Amazing!

From Talk

your dream (foodie) vacation?

As a Brit who's been to a lot of the places already mentioned (Japan, Lebanon, France, Italy) I would choose Chicago. Give me endless deep-dish and tavern-style pizza. Fill me with Italian Beef (cheesy, combo with peppers, dipped). Get the tamales at the ready. Start turning the gyros. Take the cheesecake out of the fridge. Hang the steaks to dry. Cast a net for the lake perch. Toss the sweetcorn on the grill. Heat up the pizza puffs. Grab a Vienna Beef, and drag it through the garden. Call Milwaukee, tell them we'll be needing a large supply of Bratwurst to be cooked in beer with hot mustard. A large bag of Jay's potato chips. Proper Kielbasa, on a soft roll; or better yet, small slices of the spicy sausage Uncle Jan used to bring at Christmas. Carson's Ribs, stand at the ready. And have the Strohs and the Old Style well-chilled.

Grew up in the city, now live 4000 miles away, and miss it like crazy a lot of the time. I want a burger from Schoop's and a dog from Boz's so much...and a Lou Malnattis pizza would probably kill me with joy.

I drink, then start baking furiously cause I'm a nut. This is how I once made a cheesecake in which I somehow dropped a bunch of eggshells into. The mixer was going so I couldn't fish them out, but I was just like "ok, whatever" and kept going. It tasted good, but my roommates and I were all kinda afraid to eat much of it! Baking calms me down, though.

Wine. Preferably the bottle.

If I'm very angry but trying to "hold my tongue" I tend to eat very spicy Thai or Indian food. I think I must be trying to damage the poor sucker before I say something I regret.

I can't eat when I am angry either. I can clean though, it's so therapeutic.

Now when I am stressed or anxious, then I can eat. Cheap ramen, pb&f, pasta with olive oil and garlic...anything starchy.

If I am really wound up from work, I need wine- German Riesling or New Zealand Sauv Blanc, preferably- I can not drink anything dry if I am tense!

Food wise- Dumplings. For some reason, dumplings are a comfort food to me.
