So what's the deal with MSG?

@hahah With the true allergies being rare (a true allergic reaction is hives, rash, swelling, trouble breathing, not headaches, bloating or stomach issues). Really?
Due respect intended, but "true allergies" can and do present in the ways you state as being not plausible. A shellfish, nut, berry, fruit allergy in an adult may manifest as sudden onset of abdominal discomfort, mental confusion/combativeness, or headache; hives need not be present. Any reaction should be treated as life-threatening. It should be noted that children and adolescents tend to have different symptoms than adults. MSG sensitivites are very real, though not as common as first thought or the media would like one to believe. The more concerning decades-long proliferation of MSG is that it is being used so extensively by processed food manufacturers and fast food outlets in order to avoid having to buy/use quality ingredients. Adding more MSG allows Campbell's to continue producing the "chicken noodle soup" adored by millions in all it's salty un-chicken goodness.

Dear AHT: Great Burger at Radegast Hall & Biergarten in Williamsburg

Nice write-up. I'll make it a stop next time in NY. Might have to unhinge my jaw, as that burger looks fairly big. I'm hoping it's a "squishable" as I term any burger that thick.

Changing recipes - How bold are you?

Thanks for all of the suggestions. If I do use it I'll probably try your idea, Ms. Stovetop. If not the side serving suggestion works too, czken. I hadn't factored in the watering down aspect. And good to hear how some of you manipulated or rescued dishes.

Great write-up, Ben. Lots of detail, which I appreciate. I've had the chili, (work catered thing), but not their burger. Good contribution. I live in the area and always dig reviews of burgers near me.

Perhaps I misunderstood bdubdab, but why is it, to paraphrase, less tragic when it happens to Roger Ebert? I simply do not understand that reasoning.

When Z Pizza first started I thought they were trying to do exactly what you suggested; fresh ingredients, above average pizza served/delivered quickly, but I think they've caved more than a little bit.

I've had their pizza only when traveling, but wasn't overly impressed. I would love to see another start up step up to the plate.

I second the nastiness of cooked lettuce. As I've said before I prefer very crisp lettuce on my burger. I do like the burger constructed when served on a non-toasted bun (yes, I'm in the minority there), but it keeps the lettuce cold and the melding of flavors and temperatures from a hot medium or medium rare burger with properly melted cheese is a party in my mouth.

From A Hamburger Today

Dear AHT: Sick of Undercooked Burgers

It's always been medium for me. Most places know that "medium" is still very pink in the middle. That said, I've often gotten burgers overcooked and have started asking for "medium rare" to get "medium."

And I agree with Nick that there are plenty of places out there that do a damn fine burger or slider cooked "through."

From A Hamburger Today

This Week's Poll Results

Agree about the shredded lettuce not belonging on a burger.

I may be in the minority here, but to me there is no substitute for a leaf of very crisp iceberg lettuce (yes, I know many people consider iceberg an abomination). There's something about the burst of juices and warmth from the burger combinging with the cool bite of firm lettuce. Of course I'm one of those that voted for a non grilled bun in order to insure this deliciousness. Burger porn indeed.

Lemonfair, thanks especially for your response. I'd not been aware of the pulse difference.

Embarrassing food question. Need help with foods I love.

Thanks, moibec and lemons.

Yes, even pasta with olive oil and salt and pepper will give me lower stomach pain, (and I eat hardly any bread). I have a gastroenterologist who has done tests, with results indicating there should not be a problem. If it matters, my dad has the same issues with similar foods.
