What are good techniques for making bacon wrapped potato wedges?

Thanks for all the feedback. The wedges turned out great, I cut the wedges small enough that even though the potato wasn't crispy (it was soft and fluffy) the crispy bacon more than made up for it. here is what I did if anyone cares: http://joybeewhatsfordinner.blogspot.com/2013/01/bacon-wrapped-potato-wedges.html

Thanks again your suggestions were great.

New Year's Food Resolutions!

I plan to finally use bitter melon. It is a new food for me and easy to find here in Honolulu's Chinatown. I have found stir fry recipes that use it and I just have to try it. It's supposed to be bitter (as the name implies). Some people love it and others do not. I will soon find which category I fall into.

What are good techniques for making bacon wrapped potato wedges?

I want to make bacon wrapped potato wedges tomorrow's football game. I will be baking them. So far my plan is to boil the wedges for a few minutes, toss in oil and spices, wrap with bacon and bake at 425F for about 20-30 minutes. I've never made potato wedges before and I would like them to be crisp not soggy. Does this sound like a good recipe plan? Does anyone have tips for making good potato wedges?
