I love reading Baking and Books. The posts have a friendly vibe to them, the recipes are great and I especially love how Ari often includes fascinating bits of culinary history in her posts.
What is your favorite (quick and easy) breakfast food?
Toasted English muffin, scrambled egg in the microwave, a little cheese.
Yogurt with granola and dried fruit.
Oatmeal. *wry smile* I keep frozen fruit and lots of spices on hand, so that helps.
A Carnation Instant Breakfast, peanut butter, banana, and milk smoothie.
Cottage cheese with a banana and toast.
Hard-boiled egg and toast.
Frozen waffles/pancakes with peanut butter and honey.
Cheese toast with a side of fruit.
Scrambled egg and cheese wraps (with or without breakfast meat - precooking breakfast meats help!)
I've been experimenting with breakfast egg muffins - sort of like breakfast casserole, but made in a muffin tin and frozen and reheated. I'm not quite happy with it yet, but I think I'm close!

I like peanut butter on a whole grain waffle with banana slices. I've also spread cream cheese on a wheat tortilla, topped with banana slices, cinammon, and little bit of sugar. Mixing different fruits in my cereal keeps me from getting too bored with it. :O)

Smoothie -
1 banana
1/2c cottage cheese
1/2c yogurt
2-3tbsp water or milk
1/4-1/2c berries (frozen works great!)
1tsp honey
1 tsp ground flax
Blend, toss in a travel mug, and enjoy :-)

smoothie with banana, strawberries or other fruit, milk or juice and a tablespoon of Ovaltine or malted milk powder

occasionally yogurt with flax seed meal; I'll try it with honey some time...

The next time you make pancakes, freeze leftovers, and you have a quick way to prepare and eat them!

and when I have to force myself to eat (no appetite because of medical conditions and meds)...I go with a nutritional supplement. Sometimes it's easier to drink than eat something, especially when you just feel you can't. Meal replacements are also convenient and portable. I like Carnation instant breakfast (all flavors) and Ensure (chocolate is my favorite, not a fan of vanilla, and strawberry is pretty good. Has anyone used the Butter Pecan before? If so, is it worth buying?

capers, sauerkraut (white AND red), felafal mix, canned vegetables, white wine vinegar, chocolate, coconut powder and cream coconut (hard)...I was in the pantry earlier and this is all I can recall!

Fried potato cubes made from leftover baked potato, soft scrambled egg quickly cooked in the same pan, toast with butter. Ketchup. Makes a good supper, too.

Piece of whole wheat toast, layer of fresh spinach, fried egg occasionally a piece of cheese melted on top, 5 minutes.

A bottle of ginger powder since last Christmas for my grand dream of having a gingerbread making day with my nieces and nephews but getting the right molasses scares me off. I don't have unused stuffs. Things always get used up - I buy or have been given stuffs I like and watch expiry dates with clockwork precision. First task when moved in with bf - dumped all his expired junk food - canned macaroni and cheese, canned ravioli for eg...! It was a revolution.

emily20008: Oh. That's right. Did you ever see that PBS or Discovery Channel program on them? Some oceanographers made a complex maze of tubes and such and showed how smart the octopi were. I'm going to try to find that on YouTube now.

I make a simple french toast using whole wheat bread and cover with berries...takes less than 10 minutes and I get a very healthy breakfast.
