Since I've recently been diagnosed with a couple of food allergies (wheat and milk), I can answer the corn pudding recipe. Use coconut milk - it does not have an overwhelming coconut flavor, and since most corn souffles/spoon breads are fairly sweet and strongly flavored, what coconut taste there is will be lost.
Also, to the person with the soggy bottom crust on their fruit pies - place a baking stone in the bottom third of your oven when you preheat and bake the pie on that. It will pretty much guarantee a crisply cooked bottom pie crust.
