My Mother used to make corned beef hash all time whenever we had left over corned beef and potatoes, but it doesn't seem to be a staple like it used to be. This recipe is pretty much how she made it without the chili and hot sauce, which wasn't widely available or widely used 60 years ago. Next time I have corned beef, I'm definitely trying this recipe!
