New Jersey Dispatch: Farmers' Markets in Elizabeth, Millburn, and Freehold

Brian, have you made it to Highland Park's farmer's market? I think it's the best in that general vicinity. At least, compared to Metuchen and Edison. Was wondering if you knew how it stacked compared to the others.

A White Castle Wedding

There's something gloriously ironic about a lady named Krystal getting married at a White Castle.

Jersey Dispatch: King's Village in the 'Chinaburbs' of Edison

Looking forward to more articles from you, Brian. I've been in Edison almost all my life and love the food here despite that the rest of my family seems to have a major aversion to trying anything new or "ethnic". I live in North Edison, so the Indian joints are more my haunt.

Weekend Book Giveaway: 'The Elements of Cooking'

For me it's time. Knowing when to be patient so that ingredients set and flavors marry. Knowing when to be hasty and get ingredients moving before they burn. And perhaps most importantly, knowing that you're not gonna get it right the first time.

Weekend Book Giveaway: Service Included

At a restaurant in upstate new york 2 weeks ago, after they had run out of a specific wine we'd tried to order:

"well, this one's Austrian, so it will probably taste like the Australian wine you just had, right?"

uhhhh.....

New Jersey Dispatch: Farmers' Markets in Elizabeth, Millburn, and Freehold

Morristown's farmer's market rocks - usually at least 5 farmers set up there, including a smattering of organic farms.

JP:

It's tough comparing them. Different days of the week, and then weekends vs weekdays. And of course, the fact that the best stuff winds up at Union Square or Headhouse doesn't help either.

A White Castle Wedding

I finally tried White Castle last week, because I was in St. Louis for a family reunion. I was SO disappointed!! The lower bun was flat-out wet, and there are few things that gross me out more than saturated bread. The patty had no flavor and looked like a thick slice of lunchmeat. Too bad, because I had high hopes that it would at least taste good. Totally bland.

Mom used the recipe on the box for roasted potatoes with lipton onion soup mix!

Never had sous -vide, but Mom used to make a whole chicken w/ vegetables slow cooked in those plastic Reynolds bags. So juicy and delicious.

Pot Roast. Slow cooked with vegetables and a gravy that would make Elvis beg for eighths.

I agree with SarahB. Those deep-fried short ribs at Ko were amazing. I still pack my lunch items in plastic bags - not quite as exciting as those short ribs.

The deep-fried short ribs at Ko (I think they are prepared sous-vide...). Mom made a mean pot roast in a bag.

I've never had sous-vide so I'll say a massive roast beef sandwich for lunch when I was in middle school.

Peanut butter and fluff sandwich aka the Fluffernutter. Wrapped in a plastic bag, it never fails to taste like childhood.

My mom would make shake and bake, but add in crushed cornflakes to the shake part!!

i've never had sous-vide or shake 'n' bake! mom used to bake chicken in reynold's oven bags though, pretty tasty results AND easy cleanup :P

never had a sous-vide dish and mom didn't much use plastic bags either. she did pack me awesome lunches in tupperware though - fried rice, spaghetti, sandwiches, etc. all good and homemade.

Hot dogs... Still in the wrapper and heated with continuos running hot water in the sink. It was a creative solution to a gas problem (the stuff that runs the oven and stove, not the flatulance...)

My mom keeps her home made pizza in plastic bags for leftovers!!!

I've never had anything prepared sous-vide but my most fond remembrance of dish involving a plastic bag from childhood is when my mom used to marinate pork tenderloin in sesame oil, honey, fresh ginger, brown sugar, garlic and soy sauce overnight before coating it in sesame seeds and roasting it. Raw meat swimming in a bag meant deliciousness the next night!

Hmm.. I faux-sous vide some chicken breast this weekend with butter and herbs in Saran wrap. I got the temperature too high and it was good but not great. The confit byaldi i served it over, however, was stellar keller.

i make pretty good steamed broccoli using those ziploc steamer bags, so let's go with that.
