Is Public Drinking Good For the Neighborhood?
Also, I was in Hong Kong a few weeks ago, hopping from noodle shop to dai pai dong, to roast meat emporium, drink in hand the whole time. So was everybody else in HK Central at 10pm on Friday. But, what the mostly inebriated folks around weren't doing, is trying to rob and kill each other. As usual, in the States, treat the symptom instead of the problem.

Wow. The litmus test for private or public should be ownership, not access. Only places that are paid for and maintained with tax dollars are public.
Homebrewing: How To Brew A Russian Imperial Stout
I've got a couple of these kitchen sink Imperial Stouts in bottles right now. With 10.5% ABV and these slightly cool temps, they're taking FOREVER to carb up. I've got a feeling they'll be ready just about the time of year when it's no longer appropriate to drink ultra robust beers.

I've got two attempts at an Oskar Blues Ten Fidy clone in bottles right now. Mashing the two slightly different but equally enormous grain bills went well, and I hit my gravities spot on, as well as getting the exact attenuation I was looking for. Six weeks in the bottles, and they're still not carbed up. They both taste pretty damn good flat, though.
My 8 Favorite Christmas Beers
Is the St. Bernardus Christmas just the ABT 12 with spices? I'm curious because it's got the same abv. Either way, I love me some quads at this time of year.........or are they Belgian strong dark ales? I'm not sure what the difference is.
@rcbeck77 Brooklyn Chocolate Stout is phenomenal and it's a tremendous value when compared to other seasonal releases of the same quality.

I'm with you on the way most brewers use spices. I love the Belgian "If you can identify the individual spice, you've used too much" approach, though. Use 'em to build complexity, not to create a stunt beer.

Airport Food That Doesn't Suck
I've had all sorts of good handmade dumplings and la mian at Hong Kong International. There's a bar with decent Belgian beer there, too. Good bibimbap and lots of comfortable places to crash at Incheon. Decent sushi at Narita. I've had some pretty passable kaya toast at Kuala Lumpur International. But if you're at the Newark outpost of Grand Central Oyster Bar, stick with the oysters. My wife and I had a couple of abysmal sandwiches there a few weeks ago. And why on earth does Charles de Gaulle have such crappy food?

Just South of Lowell MA, take route 3 North to the crummy little town of Billerica where you'll find Sichuan Gourmet. The best Sichuan in the States.........maybe. And, that part of Northern Mass has an insanely large Southeast Asian population, and the restaurants to prove it.

That all looks phenomenal, but is it all pretty strictly Thai? I’m wondering about the diversity of cuisine in Bangkok. I was headed to Thailand a few weeks ago, but I never made it because I had less than six months left on my passport (rookie mistake). This resulted in an unexpected but wonderful two week layover in Kuala Lumpur. I was stunned at the variety of foods being served at restaurants and from hawker carts in that city. Northern Indian, Southern Indian, regional Chinese, all manner of Halal foods, all the SouthEast Asian standards, Singapore style hawker food, local Malay inventions, and mash ups of all the above. Curry Mee at Restauran Mee Kai Kee was the single best dish I’ve ever eaten. I’m hoping to set out again for Thailand in a few months, but I can’t imagine a better eating experience than I had in KL.

Kitchen Tricks: Squeeze Bottles with Built-in Recipes
The recipe idea is a great one! One thing I've learned about labeling squeeze bottles: write on them BEFORE yout attempt to fill them. Once you get a little oil on the outside of the bottle, no amount of scrubbing will get them clean enough to allow ink to stick.

Lunch Today: XO Steamed Rice Noodles at XO Restaurant
I'm with @AnnieNT. I'm surprised that there hasn't been more attention paid to XO sauce on S.E. I make big batches of it to put on fried rice, noodles, seafood, etc. It's super tasty and keeps forever, but it gives me GNARLY breath.
Should Meat Eaters Slaughter Their Own Meat?
Why would you not sever the animal's head completely? I would think that the most humane death would involve seperating the brain from the rest of the central nervous system as quickly as possible. Is it a Kosher/Halal thing?
