What to Watch This Week

Considering the show shares the same name as his book, Bourdain has a writing credit on the show (probably a "based on") and the main character's name is Jack Bourdain, yep, I'm pretty sure he had to give his permission. (And probably got a nice fat check in the process.)

It's actually not a bad show. I probably watched four or five episodes and found it pretty enjoyable.

Have you tried any new ice cream flavors lately?

I'm not a big ice cream fan but anytime I visit my sister-in-law up in Massachusetts I must have Grape Nut Ice Cream made at Kimball's. It's a local dairy farm and it's the best ice cream I've ever had, basically their vanilla with heaping handfuls of Grape Nuts cereal throughout. It's freezing here in Maryland today but I'd eat a huge vat of it right now!

Cookbook Quandry

I get a lot of recipes on-line but if I'm doing something tried and true I almost always start with my copy of Fannie Farmer. I don't like the way recipes are presented in Joy of Cooking but will use that sometimes as well. Frankly, I use the Cooking Light annual cookbooks more than anything because I like the lightened versions they present. Heck, anybody can add a stick of butter and a cup of heavy cream to something and make it taste good. What can you do when you're not pushing the fat and calorie content through the roof?

Favorite bottled BBQ Sauce?

I highly recommend Head Country BBQ Sauce made in Ponca Cty, OK. It's a small company and an offshoot of their excellent BBQ restaurant, also named Head Country. They have three varieties – regular, hickory (which I'm addicted to) and hot. They also make a killer Seasoning Rub that I use on everything from beer can chicken and grilled fish to veggies. I think it blows away any of the mass market sauces like Stubbs or Sweet Baby Rays.

Question of the Day: How do you want those eggs done?

This morning it was over easy with a slice of cheese on top, served atop a slice of Canadian bacon and sandwiched between the halves of an English muffin. With plenty of hot sauce. Usually I go scrambled or poached but I had a hankering for an egg sandwich.

Anybody else here do scrambled eggs and hot dogs?

Question of the Day: What do you eat at the ballpark?

Adam... they also serve "a 1/5 pound Farmland 8 inch All Beef Black Angus Hot Dog, topped with two strips of freshly cooked bacon, 1 oz. Sautéed Onions, 1 oz. Sautéed Sauerkraut and ½ oz. Cheddar Cheese Sauce, all on a fresh baked bun" and The “Swiss Brat” "a Landshire Bratwurst with a slice of Swiss cheese in the middle of it. 1oz. of Sautéed Sauerkraut is served on top."

What's for dinner on Easter? Are you cooking?

We used to meet at my brother-in-law's which was halfway for us and my in-laws. But he had the audacity to leave NJ for Florida! So we'll trek up to NJ and have dinner at Braddock's Tavern in Medford.

Question of the Day: What do you eat at the ballpark?

I have to have a dog and a beer. If I go to Camden Yards I'll usually grab a sandwich from Boog's BBQ beyond the outfield wall as well.

I have, however, adopted the Gateway Grizzlies of the Independent League as my favorite team not named The Philadelphia Phillies. They're the ones that are serving Deep Fried White Castles.

I can also recommend Hash-House-A-Go-Go, probably 15 minutes off the Strip, for massive amounts of upscale diner food. And, if you're a beer or whiskey fan, stop by an unassuming strip mall by the UNLV campus and spend some time in The Freakin' Frog. Or as my brother and I call it, The Greatest Bar Ever. Amazing beer selection and, according to one of their owners, the largest selection of whiskeys outside of Scotland. Food wasn't bad either. We spent about seven or eight hours there eating and drinking last year and I think we'd still be hanging out there if we didn't have wives.

Question of the Day: What do you cook that your parents wouldn't approve of?

I learned to cook becase I became keenly aware that my father couldn't, one day when my mother was sick. That helplessness in the kitchen freaked me out so I started watching and learning. The only problems were that my mother hardly ever used anything more daring than salt, pepper or oregano, veggies came two ways – frozen and canned – and her idea of fish was a box of sticks from Mrs. Pauls. It took me years to get over that bland, non-daring upbringing and I'm sure my mother would blanch at everything from my Peruvian Chicken (with a spicy, fragrant paste) or any of the number of tilapia dishes that we've become addicted to.

Question of the Day: What's your favorite type of steak?

Two faves. London Broil, marinated in red wine and garlic, then grilled till medium rare. I've also become a HUGE fan of skirt steak, simply seasoned with S&P then grilled or broiled for five minutes per side. Goes great by itself or in tacos.

Day After Thanksgiving Sandwich: Sliced turkey, cranberry sauce, stuffing, mayo, preferably on a baguette but I can do bread for the sake of the question.

Had this at Doughboy's in North Hollywood last fall. For all the hype I thought it was just OK. I thought the icing was the best part. Then again, I stood in line for an hour at Pink's just so I could try their hot dogs so what do I know?

Question of the Day: What's the worst diet you've ever been on?

I've never really been on a diet but my wife did Atkins for a while and I got sucked in around the edges. I could deal with pretty much anything BUT the no caffeine. She was making (ugh) decaf in the morning and after about two days I just couldn't take it.

Any suggestions for low calorie, healthy toppings for pizza?

We make something we've dubbed 'Bruschetta Pizza' which features chopped plum tomatoes, minced garlic, salt, pepper, fresh basil and a little bit of olive oil.

What is the best food you have ever had while on vacation?

Wow, great question. I've had great food at the Austin Creek Grill at the tip of Hatteras Island on OBX and there was something about that first In-N-Out Burger when I was in LA last fall. But the best food I've ever had on vacation was a few years ago in Cabo San Lucas. The first night there we had dinner at Mi Casa, one of the area's best restaurants: avocados filled with a cold salad made from bay scallops, chopped tomatoes, onions and herbs and a perfectly grilled filet of carne asada served alongside beans, rice and guacamole. The next day, though, we were out walking around the old town part of Cabo and stumbled upon a hole in the wall place called Taquiera el Venido (or something like that). Amazing homemade salsas, a sausage soup that was incredible, and a trio of tacos (beef, pork and fish) that I'd get on a plane and go back for right now. The cheapest meal of the whole trip and easily the best.

Who's your most/least favorite food personality on Food Channel?

I enjoy Alton Brown, the guy who does Ham on the Street, and the Hungry Detective. Emeril just makes me laugh because I'm not sure how hard it is to make things taste good when every recipe calls for a stick of butter and/or a cup of cream. I tuned in a couple weeks ago and he was literally deep frying bread for sandwiches.

Bobby Flay rubs me the wrong way, largely because he seems so full of himself and such a know it all, but I must admit that I salivate over much of what he prepares.

The one that grates on my nerves, though, is that Paula Dean. Ugh. A few weeks ago I was sitting in the living room and my wife had fallen asleep on the couch while Dean's show was on. I wanted to jab an icepick in my ears to block out that phony baloney Southern "charm" of hers. Blach!

What would be your favorite items to find on a Brunch menu?

One of the best breakfasts I ever had was at a little place in San Francisco a few years ago. They did a version of Eggs Benedict but topped the whole thing with lump Dungenese crab. Phenomenal. I'm pretty much a sucker for any kind of Eggs Bennie. I saw a place recently where they used a fried green tomato in place of the Candian bacon.

Tasting Rachael Ray

Better idea on paper than it actually turned out. I'm no Ray fan and was hoping for something really entertaining. Meh. I hate to think how much time went in to something so blah.
