What to Watch This Week
Considering the show shares the same name as his book, Bourdain has a writing credit on the show (probably a "based on") and the main character's name is Jack Bourdain, yep, I'm pretty sure he had to give his permission. (And probably got a nice fat check in the process.)
It's actually not a bad show. I probably watched four or five episodes and found it pretty enjoyable.
Have you tried any new ice cream flavors lately?
I'm not a big ice cream fan but anytime I visit my sister-in-law up in Massachusetts I must have Grape Nut Ice Cream made at Kimball's. It's a local dairy farm and it's the best ice cream I've ever had, basically their vanilla with heaping handfuls of Grape Nuts cereal throughout. It's freezing here in Maryland today but I'd eat a huge vat of it right now!
Cookbook Quandry
I get a lot of recipes on-line but if I'm doing something tried and true I almost always start with my copy of Fannie Farmer. I don't like the way recipes are presented in Joy of Cooking but will use that sometimes as well. Frankly, I use the Cooking Light annual cookbooks more than anything because I like the lightened versions they present. Heck, anybody can add a stick of butter and a cup of heavy cream to something and make it taste good. What can you do when you're not pushing the fat and calorie content through the roof?

What's your favorite local funky dive?
A bar in Baltimore's Fells Point neighborhood called, well, Bar. I will say nothing more because it should remain as unsullied as possible.

Question of the Day: What's the best food song?
Commander Cody and His Lost Planetary Airmen "Two Triple Cheese, Side Order of Fries", "White Castle at 3 AM" by ISM.
What food and/or wine related print magazines do you read?
I'm hurt. Nobody even mentioned The Hungover Gourmet. Sniff... ;-)
Favorite bottled BBQ Sauce?
I highly recommend Head Country BBQ Sauce made in Ponca Cty, OK. It's a small company and an offshoot of their excellent BBQ restaurant, also named Head Country. They have three varieties – regular, hickory (which I'm addicted to) and hot. They also make a killer Seasoning Rub that I use on everything from beer can chicken and grilled fish to veggies. I think it blows away any of the mass market sauces like Stubbs or Sweet Baby Rays.
Question of the Day: How do you want those eggs done?
This morning it was over easy with a slice of cheese on top, served atop a slice of Canadian bacon and sandwiched between the halves of an English muffin. With plenty of hot sauce. Usually I go scrambled or poached but I had a hankering for an egg sandwich.
Anybody else here do scrambled eggs and hot dogs?
Question of the Day: What do you eat at the ballpark?
Adam... they also serve "a 1/5 pound Farmland 8 inch All Beef Black Angus Hot Dog, topped with two strips of freshly cooked bacon, 1 oz. Sautéed Onions, 1 oz. Sautéed Sauerkraut and ½ oz. Cheddar Cheese Sauce, all on a fresh baked bun" and The “Swiss Brat” "a Landshire Bratwurst with a slice of Swiss cheese in the middle of it. 1oz. of Sautéed Sauerkraut is served on top."
Road trip!!!
What's for dinner on Easter? Are you cooking?
We used to meet at my brother-in-law's which was halfway for us and my in-laws. But he had the audacity to leave NJ for Florida! So we'll trek up to NJ and have dinner at Braddock's Tavern in Medford.
Question of the Day: What do you eat at the ballpark?
I have to have a dog and a beer. If I go to Camden Yards I'll usually grab a sandwich from Boog's BBQ beyond the outfield wall as well.
I have, however, adopted the Gateway Grizzlies of the Independent League as my favorite team not named The Philadelphia Phillies. They're the ones that are serving Deep Fried White Castles.
Dateline : Las Vegas
I can also recommend Hash-House-A-Go-Go, probably 15 minutes off the Strip, for massive amounts of upscale diner food. And, if you're a beer or whiskey fan, stop by an unassuming strip mall by the UNLV campus and spend some time in The Freakin' Frog. Or as my brother and I call it, The Greatest Bar Ever. Amazing beer selection and, according to one of their owners, the largest selection of whiskeys outside of Scotland. Food wasn't bad either. We spent about seven or eight hours there eating and drinking last year and I think we'd still be hanging out there if we didn't have wives.
Question of the Day: What do you cook that your parents wouldn't approve of?
I learned to cook becase I became keenly aware that my father couldn't, one day when my mother was sick. That helplessness in the kitchen freaked me out so I started watching and learning. The only problems were that my mother hardly ever used anything more daring than salt, pepper or oregano, veggies came two ways – frozen and canned – and her idea of fish was a box of sticks from Mrs. Pauls. It took me years to get over that bland, non-daring upbringing and I'm sure my mother would blanch at everything from my Peruvian Chicken (with a spicy, fragrant paste) or any of the number of tilapia dishes that we've become addicted to.
Question of the Day: What's your favorite type of steak?
Two faves. London Broil, marinated in red wine and garlic, then grilled till medium rare. I've also become a HUGE fan of skirt steak, simply seasoned with S&P then grilled or broiled for five minutes per side. Goes great by itself or in tacos.
If it's true "we are what we eat," what are you?
Hmm, I must be a drunk chicken. Or, tonight, tipsy tilapia.
Hungry while shopping? What do you buy too much of?
Frozen food. Stuff that looks waaaaaaay better on the box than it does when it comes out.
What goes into your ultimate sandwich (bread, spreads, filling)?
Day After Thanksgiving Sandwich: Sliced turkey, cranberry sauce, stuffing, mayo, preferably on a baguette but I can do bread for the sake of the question.
your last meal
Tough choice. Though the arrival of grilling season might change my choice to a nice Beer Can Chicken, I'd probably say good diner meatloaf with gravy, mashed potaoes and creamed spinach.
Red Velvet Cake
Had this at Doughboy's in North Hollywood last fall. For all the hype I thought it was just OK. I thought the icing was the best part. Then again, I stood in line for an hour at Pink's just so I could try their hot dogs so what do I know?
Question of the Day: What's the worst diet you've ever been on?
I've never really been on a diet but my wife did Atkins for a while and I got sucked in around the edges. I could deal with pretty much anything BUT the no caffeine. She was making (ugh) decaf in the morning and after about two days I just couldn't take it.
Any suggestions for low calorie, healthy toppings for pizza?
We make something we've dubbed 'Bruschetta Pizza' which features chopped plum tomatoes, minced garlic, salt, pepper, fresh basil and a little bit of olive oil.
What is the best food you have ever had while on vacation?
Wow, great question. I've had great food at the Austin Creek Grill at the tip of Hatteras Island on OBX and there was something about that first In-N-Out Burger when I was in LA last fall. But the best food I've ever had on vacation was a few years ago in Cabo San Lucas. The first night there we had dinner at Mi Casa, one of the area's best restaurants: avocados filled with a cold salad made from bay scallops, chopped tomatoes, onions and herbs and a perfectly grilled filet of carne asada served alongside beans, rice and guacamole. The next day, though, we were out walking around the old town part of Cabo and stumbled upon a hole in the wall place called Taquiera el Venido (or something like that). Amazing homemade salsas, a sausage soup that was incredible, and a trio of tacos (beef, pork and fish) that I'd get on a plane and go back for right now. The cheapest meal of the whole trip and easily the best.
Who's your most/least favorite food personality on Food Channel?
I enjoy Alton Brown, the guy who does Ham on the Street, and the Hungry Detective. Emeril just makes me laugh because I'm not sure how hard it is to make things taste good when every recipe calls for a stick of butter and/or a cup of cream. I tuned in a couple weeks ago and he was literally deep frying bread for sandwiches.
Bobby Flay rubs me the wrong way, largely because he seems so full of himself and such a know it all, but I must admit that I salivate over much of what he prepares.
The one that grates on my nerves, though, is that Paula Dean. Ugh. A few weeks ago I was sitting in the living room and my wife had fallen asleep on the couch while Dean's show was on. I wanted to jab an icepick in my ears to block out that phony baloney Southern "charm" of hers. Blach!
What would be your favorite items to find on a Brunch menu?
One of the best breakfasts I ever had was at a little place in San Francisco a few years ago. They did a version of Eggs Benedict but topped the whole thing with lump Dungenese crab. Phenomenal. I'm pretty much a sucker for any kind of Eggs Bennie. I saw a place recently where they used a fried green tomato in place of the Candian bacon.
Tasting Rachael Ray
Better idea on paper than it actually turned out. I'm no Ray fan and was hoping for something really entertaining. Meh. I hate to think how much time went in to something so blah.
Who's your most/least favorite food personality on Food Channel?
I used to watch a lot of FN back in the early days. I enjoyed Jack McDavid, Mario Batali, Sara Moulton. Now, I never watch FN. The turning point, for me, was when Rachel Ray became a "star" (gag).
Now if I want to learn something about cooking, I tune in PBS, and watch Jacques Pepin, Lidia, or the two ladies on America's Test Kitchen.
Who's your most/least favorite food personality on Food Channel?
Least: Ina Garten; from her voice to her food, personality, friends, etc. . .she drives me insane.
Most: Giada Di Laurentiis, I have a girl crush on her.
Who's your most/least favorite food personality on Food Channel?
I have to agree with many comments here.I have studied culinary arts for years and these housewife cook wannabees do not know the difference between a good Veloute and a bowl of gravy.
Where does the food netwok find these people?
Sandra Lee gets so excited over her booze, you would think she was an alcoholic! Rachael Ray acts like the host of Sesame Street with her ignorant, goofy, childish sayings. Paula Dean serves so much fat in her food, it is more rich than her fake, overpronounced accent which is comparable to fingernails on a chalkboard.Giada dresses like a street walker and tries to sound italian with her fancy pronouncing og food. What happened to credible culinarians? are all we are left with are women's day readers like these four women who think they are teaching cooking? please!!!
Who's your most/least favorite food personality on Food Channel?
My faves: Alton Brown, Anne Burrell, Ina Garten
Likes: Jaime O., Tyler F. Micheal Chirello (sp?)
My not so faves: Ray Ray, Sunny Anderson and the Neeleys...I started out liking Ray but her overexposure did me in...I haven't seen a thing on Sunny's show that I would make, and I can't stand her delivery, and the Neeleys...I like things they make but that lovey dovey crap really turns me off...and of course Sandra goes without saying...
Who's your most/least favorite food personality on Food Channel?
My favorite is Ina and my very least favorite is Giada. Can Giada's tops get any lower without this show being rated as porn? I have nothing at all against showing some cleavage, but please...this is a cooking show, and if her cooking isn't good enough to stand on its own, they should take her off the air. Actually, I tried several of her recipes and thought they we just "okay". Her books are loaded with photos of her rather than of the food, and she is way too full of herself. She should stop the annoying Italian accent when she pronounces Italian food items. She was born and raised in California for goodness sakes!
Who's your most/least favorite food personality on Food Channel?
I used to watch a lot of FN but honestly it's so overproduced these days I just can't get into it. I understand that they get the best ratings with these lame reality shows and camera-friendly cooks, but can't they appease everyone by having a few shows with hosts passionate about a particular part of cooking? Go ahead, play them at some weird-ass time of day, I'll tape it, but to me it's such a waste of a perfect medium to march out these clowns preparing the same bland recipe over and over and over again.
Favorites (none of these exist anymore): Jamie , Mario, Alton
Least favorites: Aida Whatever, Sunni Whatever
Who's your most/least favorite food personality on Food Channel?
I used to watch this channel frequently for info on cooking techniques, and good recipes; not on much anymore. Weekend getaways at $40 and such rot are a waste of time. I have no problem with the dumbed-down shows for the chef-boyardee crowd, but I have the travel channel, with Bourdain, for the other stuff.
Faves: Alton, Mario, Sara
Middling: Sandra, Giada [OK....just eye candy....no turtlenecks needed]. Flay....I like the genre, so I follow his recipes. Emeril....shelf life date gone by......he's now a shill on the "green network".....and, not convincingly so. Paula.....on the fast track to Emeril status.
Least: Ray Ray. Well, Sandra too...although S doesn't annoy me me nearly as much as does RR.
Who's your most/least favorite food personality on Food Channel?
Favorite: Ina Garten and Bobby Flay
Least Fave: Sandra Lee (worst), Sunny Anderson, Ellie Krieger, Ann Burell
Who's your most/least favorite food personality on Food Channel?
FAVE: jamie oliver -- i LOVE jamie at home. also nigella -- apparently i love brits.
LEAST FAVES: sandra lee, hands down. not even a competition!
Who's your most/least favorite food personality on Food Channel?
Favs: Ina Garten, Giada, Alton Brown. Duff Goldman & Mary Alice from Ace of Cakes - do they count?
also sort of Flay because, hey, a good looking guy who can cook? im all for it.
least favs - Paula Deen. something about her annoys the CRAP out of me. Sandra Lee - im in college and even i wouldnt eat some of the disgusting look things she makes
Who's your most/least favorite food personality on Food Channel?
Favorites: Paula Dean, her recipes I can make and have. Sandra Lee because her recipes are very doable. Why do so many dislike her? I love to watch her. I also like the fact that with Sandra Lee, you can take common packaged stuff and make something great. Alton Brown, definitely a fav of mine. I can't stand Emeril. His recipes are so complicated, why bother? Ina Garten's recipes are too complicated as well.
Least Favorite: Obviously Rachel Ray is an amature when it comes to cooking. Come on folks, I mean, my teenage son can concoct what she comes up with. Also, she is extremely irritating with all of her hand gestures and her EEVO and her rolling eyes. I deliberately turn off the FN when she is scheduled. I just don't get it. She's awful. BEST: Alton Brown WORST: Rachel Ray
Question of the Day: What's the best food song?
I sang this one in elementary choir and it's still sticks!
"In today's noodle soup, alphabetic;
there's a fly looking weak and pathetic.
In the noodles he spells out a message!
SOS, send a raft, or canoe.
Look the fly still continue's the message!
And PS, I did not like the soup."
Question of the Day: What's the best food song?
I love "Lunch Lady Land" too, by Adam Sandler. "Sloppy Joe, Sloppy-sloppy Joe...." classic.
But, in a nod to a post I did a few days ago, who can forget Rapper's Delight by the Sugarhill Gang?
"like a can of beer that's sweeter than honey
like a millionaire that has no money
like a rainy day that is not wet
like a gamblin fiend that does not bet
like dracula with out his fangs
like the boogie to the boogie without the boogie bang
like collard greens that dont taste good
like a tree that's not made out of wood
like goin up and not comin down
is just like the beat without the sound no sound
to the beat beat, ya do the freak
everybody just rock and dance to the beat
have you ever went over a friends house to eat
and the food just aint no good
i mean the macaroni's soggy the peas are mushed
and the chicken tastes like wood
so you try to play it off like you think you can
by sayin that you're full
and then your friend says momma he's just being polite
he aint finished uh uh that's bull
so your heart starts pumpin and you think of a lie
and you say that you already ate
and your friend says man there's plenty of food
so you pile some more on your plate
while the stinky foods steamin your mind
starts to dreamin'
of the moment that it's time to leave
and then you look at your plate and your chickens slowly rottin'
into something that looks like cheese
oh so you say that's it i got to leave this place
i dont care what these people think
im just sittin here makin myself nauseous
with this ugly food that stinks
so you bust out the door while its still closed
still sick from the food you ate
and then you run to the store for quick relief
from a bottle of kaopectate
and then you call your friend two weeks later
to see how he has been
and he says i understand about the food
baby bubbah but we're still friends..."
Question of the Day: What's the best food song?
"Prepare yourself and you know it's a must...gotta have a friend in cheese sauce..."
What? What's that you say? 'Gotta have a friend in Jesus??" Oh, whoops. Well, whatever, it works my way, too!
Question of the Day: What's the best food song?
Spam monty python
If I knew you were coming I'd have baked a cake Andrew sisters
Question of the Day: What's the best food song?
"Grandma Put Summer In A Jar." Great song, I think sung by John Brown.
Question of the Day: What's the best food song?
Peel Me a Grape - Diana Krall.
Question of the Day: What's the best food song?
Green Onions, by Booker T. and the MGs.
Question of the Day: What's the best food song?
A second vote for "Cheeseburger in Paradise!" It's my dad's favorite song---I've always told him we'll dance to THAT at my wedding!
Question of the Day: What's the best food song?
"Kitchen Man" by Bessie Smith, but I think it might not really be about food.
