Vitamin B12 is present in sea vegetables such as nori(used to make sushi rolls) and chorella. It is also found in nutritional yeast flakes, which I include in a lot of my recipes- great in popcorn, vegan cheese sauces, gravies, chicken style seasoning and soups. It is also found in fortified soymilk. The mouth, the upper and lower intestine also contain bacteria that produce Vitamin B12. However Vitamin B12 is always comes from bacteria, whether plant or animal source. Animal source is rich with B12 because either the animal produce it by the bacteria living in its intestine or the animal eats food that are contaminated with it. Most people who end up with vitamin B12 deficiency are not vegans, very few vegans are diagnosed with it. Article written by Fumio Wantanabe published by the Journal of Agricultural and Food Chemistry showed where vegan kids eating a diet containing nori sheets had a higher level of Vitamin B12 than those who didn’t.
Hello Kenji, your meals look very good. I bet yummy also. The vegan diet is a great way to boost your body with lots of nutrients by increasing your intake of fruits and vegetables. I encourage you to eat at least 5 servings of fruits and a big salad daily. Your body will thank you and you will feel great. Hang in there I have been vegan for 14 years and its one of the best decisions I have ever made. I love it!
