Question of the Day: What were you making last time you set off the smoke alarm?
cochinita pibil. the dish wasn't wrapped tight enough and the marinade boiled over. what a smokey mess!
Question of the Day: What's Your Favorite Kitchen Tool?
An immersion blender is a great tool, I agree. Crucial for blending soups to a creamy consistency. But, of course, I have to weigh in with the best kitchen gadget of all time: the butter dispenser. http://www.medianugget.com/2004/07/butter_dispense.html
Question of the Day: Milk Chocolate or Dark Chocolate?
Scharfenberger's Milk is the chocolate of choice in our house, although we're usually not huge fans of milk chocolate.

Diet Coke Plus, Yay or Nay?
Sweet sassy molassy! Ugh, my first experience with Coke Plus did not impress. A very nasty after-taste coupled with a less-than-refreshing during-taste. I did like the San Francisco-licious rainbow branding, but I don't think I'll be getting my daily vitamin supplement from this drink. I'm sticking to my regular regimen of Coke Zero and Flintstones Chewables....

Where is the best open-faced turkey sandwich in San Francisco?
Jenny is a big fan of the turkey, gravy, mashed potatoes combo that is most often presented as an open-faced turkey sandwich. We've tried some saloons and a few chain diners, but we really haven't found "the place" to enjoy this delicasy. Usually, for comfort food, it's Blue Plate or Chow or Home, but in this case, we're not sure. Is the open-faced turkey sandwich bound for oblivion????

I too love Veselka for their Ukranian/Polish foods... in my opinion they have the best borscht in the city. But their burger just didn't do it... it wasn't horible or anything, but definitly not top 10. I haven't been to Blue 9 in like over a year, but the more burgers I eat at all the other joints in the city, the thought of Blue 9 having a top 10 burger also now seems slim. I didn't mean to lump my comment about Burger joint and Goodburger with Blue 9... those two have a good product, I think Blue 9 is good if you're in the area, but that's about it. How about Roll-n-Roster? anyone tried that place down the street from Blue 9?

Mr. Cutlets, curious about your devotion to Veselka for a top burger. Based on a comment you made about Veselka having one of your fav burgers in the city, a few members and I had an club meat eat there... and I gotta say, that it's a decent diner style burger, but the meat has once been frozen! what's that about? I loved the light seeded bun, and flame kissed taste... but the texture of the sponge-like patty made me wonder why you pick Veselka for burgers... I personaly would never get the burger there again as there are definitly more than 10 better places in the city for burgers. And Blue 9, Burger Joint and Goodburger have a much better product.
AHT in Amsterdam: Suggestions?
Interestingly enough, when I was in Amsterdam 2 years ago, since I was in a hurry, I did pop into a McDonald's, and the Quarter pounder is a Royale with Cheese over there too
The Roethlis-Burger
I've had an impostor Roethlis-burger here in our great city, at the Steeler friendly Reservoir bar: 70 University Pl, Btwn 10th & 11th St.. it didn't contain the egg and sausage like that of Peppi's. But rather took to the Steel town's german heritage and consisted of kraut, sautéed onions, swiss cheese on rye bread... and it had a great patty of beef. yum. Some pix
Question of the Day: What's Your Favorite Kitchen Tool?
Wooden toast tongs - used every day - great for getting mini-bagels out of the toaster.
Also, thick rubber bands and clothes pins for closing all those vegie bags, cereal bags, etc.
Nonstick egg skillet.

Hey I have been to Big Nick's Burgers.
The burger is very good, but it ends at the Burger.
Diner fries - under cooked and soggy
Soda unregulated - syrup, water, gas mix way off
Diet Coke Plus, Yay or Nay?
It definitely reminded me of Pepsi One or flat, slightly more metallic coke zero. The amount of vitamins and minerals added to the drink definitely doesn't contribute significantly to a healthy diet (if you eat like a normal person, you're not missing out on anything that this would help with) and it doesn't taste as good as diet coke...not worth it at all for this diet coke addict...
Diet Coke Plus, Yay or Nay?
In my opinion, diet coke plus tastes like metal.
Diet Coke Plus, Yay or Nay?
Tried only one sample bottle---tasted like Coke Zero--or like Pepsi One---won't buy again.
Question of the Day: What were you making last time you set off the smoke alarm?
Ten years ago, a week after I moved into my apartment, I had a salted fish on the stove. The alarm went off, my next door neighbor called 911, the next thing I heard was a thump on my door. When I opened the door, three over six foot firemen towering over me.
"Everything is okay, maam?"
Question of the Day: What's Your Favorite Kitchen Tool?
My toaster. Clearly, I am not a master cook. But when I lived in China, I bought a toaster for my hotel room that I lived in because I cannot eat untoasted bread. Everything else you can do by hand.
I think my parents and grandmother would say rice cooker, and I have like three of them, because every time I move and I don't have one, my family gets very disturbed and buys me one. They are useful, though.
About the butter comment--have you tried a butter bell? my old roommate had one, and at first we laughed at it, but then we realized it was GENIUS! Basically, the butter is kept in water, outside (not refrigerated) and it is always spreadable. It seems like a weird hick thing, but it is great. Definitely a must if you use butter a lot: www.butterbell.com
Question of the Day: What's Your Favorite Kitchen Tool?
AMEN to the Microplane grater! I have used this more in the few months that I have had it than any other kitchen tool I own!
Question of the Day: What's Your Favorite Kitchen Tool?
Just like children, I love all of my kitchen tools equally....
I will say that the kitchen addition that I love more than I thought I ever would are my Emile Henry bowls. What's in a bowl? Hard to explain. I love the weight of them, the ease of cleaning, I like to rise bread in them and serve hot or cold dishes in the bowls. They look great and function better. People look at me sideways when I try to explain why these bowls are so great, but I love them.
Question of the Day: What's Your Favorite Kitchen Tool?
I've got to also give a shout out for the KitchenAid stand mixer. I recently upgraded from my old Ultra Power (4 qt bowl, 300 watts) to the Professional 600. 6 qt bowl, and 575 watts of power. Oh how I [heart] it!! Double-batches of dough are possible, and it's just a joy. I never want to cook in any kitchen without a stand mixer.
Question of the Day: What's Your Favorite Kitchen Tool?
@Jerz: I'm jealous picturing your marble-and-butcher-block island. It may be self-indulgent or maybe not -- if it keeps you cooking at home more than going out, you'd probably make up for the cost after a little while.
Thanks for the props on the topic. This one really has been fun to watch develop. As far as Question of the Day topics go, feel free to ask the Serious Eats community one (or more) of your own. The staffers here don't wanna hog the discourse, after all. You can email me at adam@seriouseats.com with any suggestions. And you can always start a topic of your own in the Talk section.
Question of the Day: What's Your Favorite Kitchen Tool?
All these comments are great, and I love each and every one. This is the first great topic we have had, Kudos Adam.
@Cathy when I built my house, I enlarged the island to 8 feet. Of the 8 feet 6 feet of it is 4 inch thick dove tailed maple butcher block. I now chop away like a looney tune, the last 2 feet is granite for doing pastry and chocolate.
If you have the money and remodel I recommend that you try some butcher block and granite, it is like heaven on earth. I was very self indulgent in my kitchen this time. I could live without these things but not the kitchen aid mixer.
@Harold I love my immersion blender but find my Waring blender a faster option when pureeing soups, sauces et al. I even use it on canned whole tomatoes.
Gosh Adam I am sitting at the end of my seating hoping someone has something really strange. I found this while watching Italian food and living show on some remote cable channel: The Arca Pasta pot. I got to have one of these.
Question of the Day: What's Your Favorite Kitchen Tool?
I second the microplane grater / zester as a must have tool in the kitchen. I absolutely adore mine and use it almost everyday for something (usually to grate fluffy clouds of parmesan all over salads and pasta). Although, for Christmas I'm finally getting the infamous Kitchen Aid mixer (in pink no less) so my loyalties may switch.
Question of the Day: What's Your Favorite Kitchen Tool?
Food processor - cut, sift, blend! Awesome.
Question of the Day: What's Your Favorite Kitchen Tool?
my microplane grater / zester. i make a ton of lemon desserts and i don't know what i would do without it.
Question of the Day: What's Your Favorite Kitchen Tool?
I use this folding cutting board every day: http://tinyurl.com/yxh7zp
Other tools I couldn't live without: my Kyocera utility knife, and unbleached parchment paper.
Question of the Day: Milk Chocolate or Dark Chocolate?
dark. but milk is good too, especially if there are crunchy or crispy bits.
Question of the Day: Milk Chocolate or Dark Chocolate?
For me it depends on the brand. There are darks I like in one brand and not in another, same for milk. When I am baking or making candy it depends on what I am pairing the chocolate with. Dark and Orange is classic. Milk and coconut always.
Question of the Day: Milk Chocolate or Dark Chocolate?
Milk. I know I *should* prefer dark, but I just don't. I've tried and tried. Finally I just said that's it, I'm not going to continue eating something that should be a treat that I simply don't like. Yes, the flavor of dark chocolate is nice and chocolately, and yes, the texture can be nice... but I just prefer milk chocolate over dark chocolate.
All that being said, I won't refuse any Neuhaus dark truffles, so bring 'em on.
Question of the Day: Milk Chocolate or Dark Chocolate?
the darker the better. milk chocolate is good, but dark chocolate is the real thing.
Question of the Day: Milk Chocolate or Dark Chocolate?
I think if it's high-end, like Valrohna tuffles (surprisingly easy to make since they only have two ingredients, chocolate and cream) then dark. But for regular supermarket chocolate, milk because cheap dark is gross. Like Kit Kat dark is gross, despite Steve Almond's hoarding of it.
Question of the Day: Milk Chocolate or Dark Chocolate?
I'm not much of a chocolate fan, so I prefer milk because it's less bitter.
Where is the best open-faced turkey sandwich in San Francisco?
Just had a great fresh turkey sandwich at the Bristol Farms Market in basement of the new Westfield Center's Food Court on Market street. Although not an open faced sandwich, it was very tasty and generous amount. Had cranberry sauce on the side. THey also had whold fresh baked pork sandwichs. THey carved the turkey right at the counter.
