Cook the Book: Perfect Roasted Chicken

This is the same way my family has always roasted chicken. I also use pepper and sweet paprika on the bird. This also always produces a perfect turkey. A 425 oven and foil on the breast after sufficient browning works really well.

A Pint With: Mark Carpenter, Brewmaster of Anchor Brewing

I took the tour in 1984 and it was a day that I still tell people about. Anchor was the first microbrew I had ever tasted and to this day is the brew I believe all others should look up to. They definitely took good care of us in the tasting room and yes, you drank as much as you wanted to. Thanks to Fritz for taking them over years ago and thanks to all the staff for putting their hearts into making everything work.

Poll: Anchovies on Pizza - Way or No Way?

Yes, but only on certain pies. Anchovies always add depth to red pasta sauces and as long as you don't tell people they're in the sauce, they would never guess what it is that makes everything taste so great.

Poll: Eggs on Pizza - Way or No Way?

The first pizza I had with an egg also had carmelized onions, buffalo mozzarella and sausage. I wasn't sure about it until the first bite but it definitely works well. The egg must be perfectly runny though.

Grilling: Cubanos

After living in Miami for the majority of my life, I am more than qualified to say that your Cubano looks perfecto. There are to many Cuban sandwiches out there made by people who have never had the real deal.

Taste Test: Store-Bought Hummus

King Harvest in the Portland area is the closest to home made. They have several varieties but toasted sesame is my preference. New Seasons carries their product.

Definitely Tim's, lightly salted or sea salt and vinegar. I tried Zapps several times and found them somewhat greasy.
