growing up in Louisville i never really believed Kaelin's claim. but it was a great place to get a burger. nothing gourmet about it just a nice piece of grilled beef and fresh accoutrement. also, it seems like everyone i knew in high school worked there at one point. what a loss.

I tried doing this on Friday night, and got some outstanding results.
Ground up the meat w/ my Cuisinart, and came out just fine. Just gotta make sure you keep an eye out so you don't get beef puree.
Used my trusty cast-iron skillet, and really digging that smash-n'-scrape technique.... thanks!

as of today, october 30th, they do sell fries, we went last night, burgers were awesome, cooked perfectly to temp, one medium rare, the other well done. the fries leave something to be desired.....they should stick to the alternates, corn, mac & cheese, chips....and also, please dont offer cokes in plastic bottles. the vintage sodas are awesome. All in all, best burger ever by far. I grew up in Chicago, been out west for in-and-out, the spot in Kenosha wisconsin, Culvers.....and 5 guys out here.....Rays is by far the best!

Finally, someone who shares my dislike of ketchup on a burger. I definitely agree that ketchup is too sugary and flavorful for a burger. It's great on fries, though.
@dmcavanagh: 4 posts down from this one we have a burger that has "tomato, lettuce, onion, fried egg, beet, bacon, pineapple, and cheese" on it. While lettuce and tomato might be too much for you, I think very few people would classify it as "tons of shit on a bun."

Dear AHT: 'Help! I'm Allergic to Beef"
I just had an allergic reaction today with itching, hives and trouble breathing from a buffalo burger at a restaurant. I also have allergic reaction to beef with same symptoms. I've had this happen after eating a steak at a restaurant. That was my worse one, Beef tips and hamburger from restaurant and beef from store. I recently started getting the natural beef(Krogers-Laura something brand) and so far I've not had any allergy symptoms when I had this It says on the package that there are no hormones or antibiotics in it.. I took a benadryl and it makes me tired but I've heard that you can take the non drowsy claritin. I'm also wondering what they are giving to the animals now that is causing this as I never had this happen for years. This started in the last year or two. I think they are loading them with hormones and antibiotics. I've never had a reaction to chicken but I heard they use hormones on them too but it must be too small to cause a reaction. Sorry I have no solution as I miss eating steak esp. when I go out to a restaurant. They do have natural steak in the store and again no allergic reaction. I do not know about the usda labeled beef in stores. I read their info. and can make no sense out of it. Also I did not realize that bison and buffalo are different

I've eaten countless Ted's burgers. I love them. I do agree with SOME of your gripes. However, the moistness of the burger is perfect if it's served when ready. It's prepared in STEAM man..it loses the fatty liquid but gets infused with H20 in the process which creates moisture. So I disagree with your opinion there. The shape of the burger is something I've always disagreed with. It does not fit the bun correctly. A simple adjustment to the shape of the "tray" that the burger is steamed with will solve this issue. It needs to be more square to fill out the surface of the bun. Besides the shape issue, the burger is fantastic. The cheese is unique and combines with the meat better than any other option. The bun may be a bit overized and "fluffy" but it does a good job containing the gooiness. You need a tougher bun than usual when dealing with melted cheese. I'd assume the shape issue has alot to do with not changing the rich history of the burger and restaurant. And that is what Ted's offers..a classic, unchanged experience. Overall, the Burger is unique, MOIST, and extremely delicious. A definite must have for burger lovers looking for something different.

Nice article, Kenji. I've tried roughly the same thing with a cast iron skillet and found that I got a good combination of sticking for crust and release for flipping.
Only problem is that Martin's won't ship their potato rolls to Canada. Do you (or any fellow commentors) know of a Canadian equivalent?

@jp_bakeupastorm: I hear ya, I despise mayonnaise with a passion, too....but I accidentally ordered the Shack burger WITH sauce once and for some reason, probably because of the addition of all the extra components, i find the sauce delicious. It's the only mayonnaise-based sauce I can deal with. But I agree that the burger is just as good without the sauce.
