Rice flour

I use rice flour (brown, white, and sweet) rather than wheat flours, in gluten-free cooking. It can be tricky to use by itself, and I usually use a blend of some kind.

Why do you ask? are you looking to use it for something in particular?

The Passing of "Newman's Own" Founder, Actor Paul Newman

Joanne Woodward's mother used to be a customer of mine at a bank I worked at in the early 1980s. It was always cool to see checks come through the bank window labeled "Paul and Joanne Newman." They were truly good people.

I loved that so much of Newman's Own profits went to special needs kids. And his light Balsamic Vinaigrette is my favorite bottled dressing!

Favorite gluten-free breakfast?

@Nativerose, be careful with McCann's oats -- most GF people don't consider this product safe. Use Bob's Red Mill oats instead. And be careful of cornflakes -- they contain malt (like Rice Krispies) and are not considered gluten free.

Bringing lunch from home

Mark Bittman had 101 ideas for a picnic in the New York Times a few weeks ago. A lot of those ideas would make great lunches -- scaled down to one.

And now's a great time of year of year to buy a new lunch box -- there's are some with cold/warm containers that are great.

Cook the Book: 'The Food Life'

My favorite grocery store in my tiny town of Milledgeville, Ga, is called Johnny McDade's (or MACK Dade's, as they say on the radio ad). Fresh local produce in baskets line the aisles and are by the checkout. The drink cooler has bottled Coca-colas and Dr. Peppers, and the butcher shop (one of the only ones in town) has fresh sliced rind bacon, house ground sausage in three flavors (mild, medium, and hotter than hell) and fresh chicken cut to order. The best days for chicken is Tuesday and Friday when the chicken truck comes in. Oh year, local ground cornmeal and grits on the shelves, and don't forget the lottery ticket! I shop there over Kroger any day of the week!

Throwdown: Chick-fil-A vs. McDonald's Southern Style Chicken

You know the taste secret to the Chick fil A chicken, right? They marinate it in pickle juice. This is not an urban legend -- one of my students is the manager of the local CFA.

And their chicken salad is ground up CFA fried chicken breasts.

I can only eat the grilled ones, but they're still the best around.

SE users: please introduce yourselves.

I'm Ginger CM - really named Ginger, don't have red hair. I split time between Tampa and a small town south of Atlanta (where I'm a college professor in mass comm at Flannery O'Connor's alma mater). I love to read about food, though I'm gluten (and a bunch of other things) intolerant and can't eat most of the stuff I see on here. I have a gf blog (gfingf.blogspot.com) and jokingly call myself the GF Paula Deen. 'Cept she's way, way richer than I am.
I am on Twitter with the same screen name and also on Facebook.

Real jambalaya??

Oh, I use tomatoes in jambalaya, both in the mix I give as Christmas presents, and in the mixture I put on the table. For every food, there is a purist (or two or a hundred) out there.

From Talk

Real jambalaya??

I work with people from Lousiana who also say 1. Real Jambalaya does not have tomatoes in it; 2. You would never mix pork and seafood. It's either pork or seafood. Apparently, chicken and pork are OK; and 3. Okra is optional depending on the part of the state you're from.

Louisana people are almost as bad about jambalaya as Texans are about chili. Persnickity...yeah, that's a good word for it.

Has anyone developed an alternative for "cream of --- " soups?

Use a healthier brand than the red one. Health Valley, Imagine, Pacific, all have tasty organic brands that are free of the nastier additives, and they have real big chunks of mushroom and taste really good. Even the Progresso brand is healthier than Campbell's.

Top Ten Worst Halloween 'Candies'

I disagree about a lot of the candy items mentioned here.
I, for one, LOVE the fun-sized (or mini, if you prefer) candies. It's a tiny bit of something insanely tasty, enough to give pleasure without causing tummy pains. When I was a young'un and I went trick-or-treating, one house gave out mini Clark bars. Yum-o-delish! I polished those off first.
I think the chewy peanut butter kisses taste absolutely divine.
Candy corn, I think is plenty of tasty, as are the candy pumpkins made of candy-corn base. Think little dollops of hardened cake-frosting.
As for apples and raisins, those I didn't mind in the least.

However, some items, I do agree about.
Toothbrushes -- a boring reminder
Religious pamphlets -- disappointing and WEIRD to boot.
Packages of "normal" food -- oh, for crying in Manhattan, what kid wants to receive a can of baked beans or a box of oat bran in his little plastic jack-o-lantern.
One time I received cough drops -- and not the Ludens or Pine Bros or Smith Bros or F&Fs, which are tasty and could pass as hard candy (as can the Ricolas). These were nasty little green pellets that were -- and tasted like -- MEDICATION. Like I said, for crying in Manhattan! For crying in Manhattan, Chicago, and San Francisco

Oh well. At least I didn't get a ROCK

Throwdown: Chick-fil-A vs. McDonald's Southern Style Chicken

it would have to be hands down to chick fil a. take into consideration the quality of their food as well as price point, flavor and texture. i've had both. i was Extremely disappointed with mcdonalds (as always really). i'm not one for take out and fast food however knowing that chick fil a hand batters each breast, fresh (Actually Fresh!) is a winner. i worked at a mcdonalds - it makes no sense how they are comparable - to me its a sad sad copy cat. oh, PS...mcdonald's "southern style" chicken on a biscuit is also a joke.
