Alton Brown Announces End of 'Good Eats' Series

Years ago, Good Eats did an episode explaining how to make three versions (crisp, soft, something else) of chocolate chip cookies. Alton explained the WHY of this. It has ALWAYS been my go-to when I had the RARE urge to make chocolate chip cookies.

Anyone Else Like Pork Roll?

I've lived in Southern NJ for 30 years......I really TRIED to like pork roll....HONEST.....BUT....being originally from an Amish area in Pennsylvania......I LOVE scrapple......guess it's just what you grew up with.

The Food Lab, Drinks Edition: The Ultimate Fully Loaded Bloody Mary

The very BEST bloody mary I ever had had Old Bay on the rim of the glass....DELICIOUS!

Sunday Brunch: Salade Niçoise

when I make this salad, I dress the potatoes and green beans while they are still warm....the flavor seems to infuse a bit better....also, I try to use Italian tuna....which is, to me, more flavorful......

Food you like that everyone else seems to find disgusting

I think I was more adventurous about eating when I was younger...but...the one thing I LOVE that I didn't see mentioned here...although I may have missed it..................SCRAPPLE!

Just wondering....if folks are so set on having as few chemicals in their foods as possible.....how does that make molecular gastronomy good?

Stories of Astonishing Food Ignorance

In fairness, I need to say that many things that are taken for granted now in the culinary world, weren't all that available 25-30 years ago. Back then, short ribs were more like peasant food.....something you could buy for cheap...and cook the H**L out of before they were rendered edible. I'm not convinced that lentils were even something very mainstream.

Video: French Bulldog Eating

my only comment is......I am glad I am watching it on video...and not LIVE....can you IMAGINE the gas this dog has from the cabbage? YIKES!

PAULA DEAN

Well....I, too, am relatively new to SE. I post comments, occasionally, but, I try not to be controversial in my statements. I chat in a chat room, and I am always surprised when new folks come in with a chip on their (not there) shoulder about SOMETHING. The room I chat in is not topic driven. When folks come in with a bone to pick, it is such a turn off that none of the regular roomies want to get to know this person better. That having been said, I CERTAINLY knew better than to start MY relationship with SE by defending a personal position.....you guys are SERIOUS FOODIES!

Food Network Cancels 'Ace of Cakes'

I will miss Ace of Cakes......I would NEVER miss ANY show that had The Neelys....I would NEVER miss Cake Boss.....I would NEVER miss that inane Cupcake Wars......
I kinda enjoyed watching Duff and his crew create such masterpieces.....but....they are on later at night...perhaps my expectations diminish as it gets closer to bedtime.

"I only have 1 item. Can I sneak ahead of you?"

Well...the line is an express line....for say....15 or less.....how LONG does the woman with ONE package think she will be delayed by waiting until YOU...with 12 packages will be checked out. Where do you draw the line. I think that many times we say OK to folks like this out of the need to not look like a jerk....but..the fact is....you were in the proper line..with the proper number of items...it was HER who was being the jerk.
My pet peeve is people who take FULL carts into the express line. I have a friend who works in a big box store....the checkers there are NOT permitted to refuse to check these inconsiderate people out.

Recap: Top Chef DC Finale, And The Winner Is...

Well.......I knew who the winner was weeks ago...(she says in her BEST Sherlock Holmes voice). I read in a local (Philadelphia, Pa) newspaper that Kevin had resigned his position at Rats. Then, a few days later, I saw Ed functioning as sous chef to Cat Cora on Iron Chef...(along with Richard Blase....which was kinda cool).....and..then,.when I saw Angelo layin in the bed....I just KNEW Kevin would prevail. Forget that he was a consistant chef throughout the competition with very few missteps.

From Talk

Which celebrity chef is more "Celebrity" than Chef?

One other point.....I see that FN is gonna do ANOTHER search for the next Iron Chef. Shame on them, to feel they need to CONSTANTLY have reality cooking shows to be competitive. The original Iron Chef had ONLY 6 TOTAL Iron Chefs. They had THREE Japanese Iron Chefs...and French, Chinese and Italian NEVER changed. a simpler time.

From Talk

Which celebrity chef is more "Celebrity" than Chef?

I gotta go with Paula Deen. I would NEVER eat...nor would I ever COOK any of her recipes!
As far as Joe Bastianich.....I LOVE it when he says he owns 20 restaurants. I guess LYDIA was just an ADVISOR. WHAT A TOOL!

Recap: Next Food Network Star, Season 6, Finale!

Well, I'm delighted to see Aarti take the win. She has been easy to watch since the first day.
On a related matter...I live in the Philadelphia area, and there was a little write up in the local paper about Kevin, who is on Top Chef. He is Executive Chef at Rats, in Mercer Township, NJ. The article atates that he has resigned, and will be starting his own restaurant. I am wondering if this is a portend of things to come on Top Chef!

Recap: The Next Food Network Star Season 6, Episode 9

I, for one, am no fan of Herb. First it was all about healthy cooking...then, when he saw that wasn't going to get him anywhere, he "found" his Latin roots. NOW...it's HEALTHY LATIN food.....I would SO not watch a show with him on it. GO AARTI! She has been true to her concept throughout the series....and, I for one, would love to see her win.
I DO agree with the fact that Food Network uses even the runners up. Look at Adam Gertler. HE has shows on prime time....Aaron.Big Daddy....has ben relegated to Sunday afternoons.

From Talk

Hilariously Wrong Food on Television

Figured I may as well throw in my little ethnic two cents.......I don't know too many folks who pronounce PIEROGI correctly. It is NOT per-O-gie.
The true correct pronounciation is PIER-O-GIE.

Recap: The Next Food Network Star, Season 6, Episode 6

I think the judges are sympathetic to Serena...thinking she has such WONDERFUL stories to tell. Me.....I'm happy Brianna left. She has always been on my radar....hoping that THIS week...would be her leap HOME....
I think the person who said she would make out better on Hell's Kitchen...or Top Chef is correct. Her food always seemed tasty and creative. Her personality was her biggest downfall.
I would like to see Brad be the runner up. That way, he would get a show in PRIME TIME...like Adam Gertler did. Afterall, the winners, with the exception of Triple D Guy.....dont seem to be anywhere except Saturday morning..or Sunday afternoon.

Recap: The Next Food Network Star Season 6, Episode 4

I wouldn't watch a show that had Briana as the star. I think she's snobby.....and it comes across. Herb MIGHT have too many demons. Sounds like he has some serious FATHER issues...that are suddenly emerging. My vote is for Aartie. She would bring the Asian/Indian componant that Food Network just doesn't have currently. I also think she has a VERY sweet way about her....makes you want to watch.

French in a Flash: Niçoise Tuna Cakes

Can't wait to try it.....sounds delicious. Incidentally, for an extra yummy crab cake....try making a mousse from scallops and some heavy cream, and folding THAT mixture into your favorite crab cake recipe....AMAZINGLY good.

Cook the Book: Frankies' Tomato Sauce

The one and ONLY time I made red sauce in the slow cooker was a disaster! The flavors did not become MORE intense, as you might imagine...but...seemed to become DILUTED. I think slow cookers are GREAT for stews and soups...and cuts of meat that lend themselves to a low, slow cooking...but...NOT pasta sauce.

Recap: The Next Food Network Star Season 6, Episode 2

Well......with regard to Dzintra.......I am wondering...she tried out several other times..and was FINALLY selected.....could it be that Food Network has run out of contenders? I wanted to like her....I wanted to be sympathetic about her eye....now...I'm just ready for them to let her go.
