Matzo Ball Soup, Help a non-Jewish girl out!

I agree- get the box of Maneshewitz (sp?). I am not Jewish, but my husband is. Thought the balls he was used to had to be some old family tried-and-true recipe, one that a Catholic could only dream of figuring out... they all use the box! So easy, and delicious. Don't squeeze them into balls. just pick out about 1" worth of dough and drop it in. So sweet! He's going to love it!

Kosher versus table salt in baking

I agree with Gator Pam- I use Kosher salt for just about everything, but discovered it's not nearly as 'salty' as regular iodized salt. Found this out after dumping WAY too much into some mashed potatoes, only to taste and think it could use a little more.
So I use regular table salt for baking since I'm not sure of the exact measurement translation.

Eating along I-87 -- Adirondacks

Schroon Lake is beautiful. And I second the Algonquin- if you stay away from Lake George Village and head to Bolton Landing it's much less touristy. The Lakeside, Algonquin of course, and one italian place close to both of those that I forget the name of.. OH if you want breakfast burritos- and who doesn't?- head to the Water's Edge in Bolton Landing- extremely casual like take out (most people drive up in their boats), you sit on top of a boathouse overlooking of a beautiful calm part of the lake. They have sandwiches and stuff too but haven't tried those. Sooooo pretty up there...

My best friend's Italian mom always makes Eggplant. Eggplant parm. It's delicious in the same ways as the chicken parm mentioned above, and veg. friendly.
It has since brought on some kind of Pavlovian response-- walk into that house and Lorraine's making eggplant, and everyone asks who died.

Taste Test: Milks Not From a Cow

Lactaid milk is great if you're lactose intolerant. My husband is, I am not, and the stuff is a perfect sub if you can find it. MUCH better than soy/rice/hemp/oat anything.

oh my god--- Krauter Salz!!!! My favorite. Some cucumber salad with it might be the best salad around. So easy yet soooo satisfying. I had a giant canister of Krauter in college, and it was constantly going missing. It makes plain white rice a meal!

Make-ahead recipes for graduation reception

Meatballs! Make mini-meatballs, freeze them until needed. Defrost and keep warm in a crock pot, with enough tomato sauce to cover them.
My mom is currently in the process of making 15lbs of meatballs for various family graduation parties- they're always requested.

Matzo balls too dense!

I've made matzo ball soup exactly twice- the first time they came out great, the second time they were hard and rubbery, almost not cooked in the middle.
I think it has to do with how you handle them- like BangieB said. The first time I was afraid of them and in a hurry to get them all into the broth together, so I just quickly shaped and tossed them in. The second time, I know that I squeezed them while shaping- almost like packing a snowball. I think that is the problem. Handle your balls gently. Words to live by.

Ravioli-maker recommendations?

I just did this as a first-time ravioli-er. Almost a disaster. I immediately broke the kitchen aid food grinder/pasta maker plastic attachment. The shaper at the end couldn't handle the dense dough. But- my husband came home with the kitchen aid metal pasta rollers and my god those things are genius. It rolled perfectly thin sheets of dough out; I just laid them down and plopped some filling on, laid another sheet on top, moistened in between with a little water and pressed. Cut apart with a pizza cutter. It worked great! Nothing fell apart while cooking. Highly recommended. Easy to use, and very happy with the results. Can't wait to try it again!

Sorry - meant to add... We had a fantastic turnout and I saw every costume from Buzz Lightyear (with blowup wings) to a kitten, to a mummy and various ghouls and goblins.

I carved two pumpkins and the parents got the biggest charge out of them.

I made brownies with whatever was left - cut into bite side pieces and placed on half the batter, then covered with the rest of the batter before baking. So you never know what you are gonna get!

I hate having so many leftovers, so since I knew that we never get a lot of trick-or-treaters at our home, I only bought one bag of Kit Kats, which I don't even really care for (OD'd of them as a kid), so I took the leftovers and turned them into some really nice chocolate cookies, made with *loads* of cocoa powder and sugar and crunched up (coarse chunks) Kit Kat bars. They turned otu pretty well, so I am happy, and my coworkers are now on a sugar high.

Operation Gratitude.

Actually, I don't give out candy. I like to give out toys or some other treat, which has worked very well when the child is diabetic or otherwise can't have candy. This year, it was glowsticks.

But I bought a bag of candy corn at 50% off to make the Candy Corn Nainamo Bars to take to an event next weekend.

I've been fighting flu since Wednesday, so BF handled door duty. I bought about three pounds of assorted candy and we got maybe nine kids (at least half of whom were teenagers that somehow felt costumes and saying "trick or treat" was beyond them - aren't you just begging for candy at that point?). So we have a lot left. I told BF that when I'm healthy, I'll chop the Hershey's mini darks up and put them in pancakes. The rest we'll freeze or eat.

I had bought a bag of snickers and a bag of necco wafers (I don't like the changes). At the last minute I was beat and decided to leave the light off - first time I've done that - but I don't get a lot anyway. So I'll eat them slowly over the next few months (really). The necco wafers are great for the glove compartment for a little unexpected sweet.

Was anyone surprised by what candies were popular and which ones were not? At first I gave out my little treat bags, which had one of each (3 in total), then I allowed kids to pick 3 from the leftovers in the bowl.White chocolate Halloween Kit-Kats (dyed orange) went first, even before the peanut butter pumpkins!

I don't worry about scraping the oreo filling either. I usually use the Nabisco Famous Wafers if I don't bake my own, but used Oreos when the store was out of the wafers and I couldn't tell the difference.

Thanks for your comment about the Oreo pie crust. I've never actually made one. I usually use graham cracker crumbs or crushed animal crackers mixed with one tablespoon of sugar for my coconut custard or key lime pie crusts.
I was concerned that the crushed Oreos would be too sweet unless I remove the icing. What do you think?

While we were leaving the house to walk our dog yesterday, a lady drove up to us in her van with her kids and screamed at us asking us why we and the neighborhood were not giving out Halloween candy. We ignored her and walked away.

A lot of the businesses were actually giving out stuff to kids. We saw kids walking in to bars and restaurants, coming out with chocolate covered pretzel sticks, cupcakes, and other treats.

Frozen peanut butter cups are great.

We didn't give out any candy, so the candy we have we're consuming (I guess -- I don't eat much candy). We bought 5-6 bags of candy today since Target was selling them at 30% off, along with Halloween-themed napkins for dirt cheap. Sucks that they didn't have anymore Halloween themed Ziploc bags and Kleenex. We just finished off last year's stock of freezer bags a few weeks ago. :)

Y'know you don't have to scrape the insides of oreos off to make the crust unless you just want to.... Smaller here than usual, numerous groups of middle-school kids, more than average. We hadn't planned on being here at all, so I had to grab some stuff very quickly. Ended up with some 100-calorie bags of microwave popcorn at the end of giving it out, which puzzled some of the little ones but mostly pleased.

And how on earth did that bowl get stolen? Mine never leaves my hand when I open the door.

We only had around 75 kids this year. Most years it's well over a hundred. We have some snickers, milky ways and peanutbutter cups that my husband will most likely take into work. The skittles and starburst I'll let the kids have...although it seems that I heard some wacky tale of Mario Batali making a sauce with starburst at some drunken bash in his early years...hmm.

Has anyone ever heard of a "doughboy"? No, not THAT doughboy :-)

It's been over 10 years since I've had a doughboy, but I used to have the recipe nailed. The filling is chicken breast, cream cheese, cheddar, colby, and scallions. I can't remember exactly what I used to season the chicken, but a little onion powder, garlic powder, oregano, and s&p would probably get you in the ballpark. I might have to stop in Esperanto tomorrow.

After a long day of doing dishes, putzing around the house, and finally doing a little shopping in the afternoon while my bf recovered from a wicked but thankfully RARE hangover, I turned to what has become the most recycled meal in my kitchen: baked pasta. I did a mashup of the SE one-pot baked ziti recipe with a few notes from a "the kitchn" fast weeknight recipe contender, adding sausage to the dish and a little cinnamon to the sauce (so good!), and using whole grain rotini. It never turns out the same twice, but last night's go was especially good.

Work tonight, and the cooks are getting DULL in employee dinners. I've worked 5 nights in the past 2 weeks, and eaten nabe 4 times. And not very good, at that!
