Alton Brown Says No to Stuffing the Turkey

Here in the UK you are always told that stuffing inside the cavity is a no-no for these reasons and that's why you stuff the neck end of the bird. If you remove the wishbone too (sorry kids) you can get those lovely slices of bothe meat & stuffing when you carve.

Haggis Shepherd's Pie

Haggis is just minced offal, what's so awful about that. I don't like the texture of much offal, but mince it and the flavour is retained. It's like liver - I hate it but love pate.

Also I can recommend haggis as a filler for a great lasagne, with a bit of homemade tomato sauce layered with bechamel and spinach.
