Goodbye, Dumpling

Kenji, I'm so sorry to hear about Dumpling. I remember the pictures when he was just a little guy and I loved him trying on costumes for Halloween. I lost my 1yr old kitty due to an car around Thanksgiving last year and it was really hard, but having another pet to snuggle with really helped....and vodka, vodka helped too.

Does This Food-By-State Map Look Accurate?

I love Okra, but I'd definitely say Oklahoma is Chicken Fried Steak. It's on EVERY menu. I'd also agree with someone earlier that Arkansas is Fried Catfish, it's everywhere there.

The Food Lab: Homemade Hot Chocolate Mix

Kenji, just finished making your non-quick hot chocolate (which was pretty quick to me) and I've never had better hot chocolate. I don't have unsweetened chocolate in the house, so used Valrhona's Abinao 85% instead. It's so good and rich. Just what I needed tonight. I find it really funny this recipe is for the quick version, but we all do it the long way. I think people who are into food just can't leave things alone. We need to make things the hard way.

The Food Lab Thanksgiving Special: The World's Easiest Cranberry Sauce

I wish I could turn my family away from the can. The first time I made Thanksgiving dinner all by myself at age 20, I made cranberry sauce from scratch with fresh oj, little sugar, and the last of Mom's Grand Marnier. No one ate it and my mom tasted it and said "That might be good with some vodka in it." I haven't made Thanksgiving dinner for them since.

"Whole Foods" Adventure!

I'm from Oklahoma and about 1.5 hrs away from the nearest Whole Foods. The first time I went to Whole Foods (in Dallas) I stuck to the Valrhona and Callebaut chocolates, fresh OJ, the Berry Chantilly cake, which was so good, and had a pint of gelato for lunch, in my car. lol The cake made it home ok, but the chocolates melted in the summer weather. Oh well. I go grocery shopping there everytime I'm out of town, either in Dallas or Tulsa. Oh, the bulk yogurt covered raisins are awesome as is all of their precut fruit.

Cranberry sauce can be good? Really? Show me how, please!

The first time I made Thanksgiving dinner by myself, I made Cranberry sauce from scratch with orange zest and a splash of Grand Marnier and no one ate it. They were so used to "the blob" they didn't know what to make of actual berries. I added a couple of heaping tablespoons to the blender and added vodka. Best way to deal with family I ever found. :D

what do i do with...

I make a flavored simple syrup with lemongrass, ginger, and lemon as the start to one of my favorite cocktails. Equal parts sugar and water (2 cups each generally works for 8 cocktails), zest of lemon, cut said lemon in half and throw it in there, stalk of lemongrass cut in half, wacked with my back of my large asian cleaver just to bruise it, and rough chopped, and a roughly chopped large knob of ginger (a palm sized piece.) Bring to hard boil and leave at boil for 5 minutes. Kill the heat and steep for 30 minutes. Combine vodka, lime juice, and the syrup for a killer cocktail. I might try using the lemon granules as a cocktail glass rimmer.

Fried Chicken - Egg Dredge, Breadcrumbs, Flour or ALL THREE?

I brine my chicken overnight then seasoned flour, egg dredge, and regular flour out the outside. I find that way any seasonings don't burn because they're protected by the egg and flour covering them. And I fry in lard and bacon grease. I don't fry chicken but maybe once or twice a year, but is it worth it! Read John T Edge's Fried Chicken. It will inspire lots of chickeny goodness. :)

I'm right along with Pumpkin. Can't cook when I'm blue. What's worse is when I'm nervous or stressed, everything I try to cook turns to crap. Burned, bland, or braindead, as in I forgot some major ingrediant, like baking soda in a cake.

If this pan could talk ...

I have my great grandmother's cast iron skillet that has been passed down by my grandmother, mom, and then myself. My great grandfather was an abusive alcoholic and supposedly one of the ways my great grandmother got away from him was hitting upside the head with this skillet, she passed it to my grandmother, who used it on her abusive alcoholic first husband, then she passed it to my mother, who used in on her abusive first husband, who passed it to me, who isn't married and uses in for FRIED CHICKEN. I'm thinking about writing a book about it. Not the happiest story a skillet could tell, but not every girl considers diamonds their best friend.

Summer BBQ - How to deal with something tactfully

You could just make my Great Aunt "special" brownies that she made for people she hated. You can add anything you want to the mix, use homemade or straight from the box, but the special ingredient was Chocolate Exlax tablets melted in with the chocolate. When she told me this as she was delivering a batch, I laughed so hard I was crying for probably 20 minutes.

What does a young foodie/recent grad need in his kitchen?

Everyone's already said the cast iron skillet, which is beyond necessary, but there're not that expensive. Good chef's knife is great but the best bet for those is a Williams Sonoma store during the after Christmas sale. Crazy good bargains. I picked up some Kai Shun knives for 40 bucks on my way back from my rents after Xmas. If it was me, I would be buying a dutch oven from Le Crueset. I don't have one, but I cook at at friend's often and I use the thing for everything from chili to making ice cream bases.

Thanks Lorelei, I found those coupons as well. But I'm buying a vintage bar juicer from the 50's and will have to wait a little bit before I can splurge again. Then I can use my juicer with my Penguin. :)
