the most overrated burger in NYC. the blue cheese is too assertive, brioche on a burger had to have jumped the shark 3 years ago, and my burger was kinda dry. the fries are just gross because of the downright obnoxious amount of rosemary that gets thrown in. and the wait! shake shack at its longest is half as long...and half the price.

Nice recap of a New York standard. One thing to clarify though, potato rolls are a Pennsylvania Dutch tradition, however the "Dutch" there means German...as in Deutsche. There are no actual Dutch people in the Pennsylvania Dutch community.

I've seen a lot of derivations on burgers on this site and a few times when the food being discussed seems to cross into a gray area where I'm not sure if it qualifies as a burger, but this time I can say with out a doubt...that is not a burger! No way. Your guest writer is using the word "burger" in place of "sandwich". I'll accept what ever topping one wants to put on a cooked ground meat patty as a burger, but for god sakes...there is no patty there to being with. tsk. tsk.

@gabagool I can't agree with you on MR, check out the burger I tried recently at 67 Burger for example, even cooked rare it was brimming with juice. The Louis Lunch burger,even when cooked medium does not have a lot of juice because it is so lean.

Steak should NEVER be cooked beyond medium rare, and really rare is preferable.

And, in the article, the reason the toast could take the little juice coming from the patty is that the patty was rare. When you have a rare burger, you get ALMOST NO JUICES. That is why MR IS OPTIMAL. If the meat doesn't hit a certain temp, the fats don't liquify and you get no juice.

It the reason that if you see blood on the outside of a burger or steak, its PROBABLY cooked medium or better. People just don't seem to realize that.

Louis has ALWAYS been a bit of a puzzle. I'LL BRING MY OWN DAMN KETCHUP THANKS. Ketchup.....it AINT a diry word. In fact, I'll go and proclaim it ONE OF THE WORLDS GREATEST SAUCES.

If a customer WANTS ketchup, he should be able to HAVE ketchup. And, believe me, enough sneak it in.

And forget about it being the burger inventor, that was a ploy to keep the city of NH from knocking the building down. Its not even close to being the first.

The toast I can take, the lack of a BURGER STAPLE, nope, nope, nope.

I ate there for the first time on Friday night. It was AWESOME. I didn't have the burger though. I had the crispy pig's ears, some oysters, chicken liver toast, pickled herring, beef tongue and lamb's heart. Very nice wine list too.

My wife and I strolled by The Spotted Pig last Sunday and for once there wasn't a line to get in and lightning struck twice when a window table for two by the bar was available. The tres classy, comfy, cool atmosphere, a well poured pint and a Hell of a hamburger made for a sensational Sunday supper.

Furhtermore The Spotted Pig is snout ant tails above the the Rusty Knot's pricey faux dive bar experience and juke box that needs to be thrown into the river, before another unsuspecting customer's appetite is ruined by Billy Joel's maudlin musings.

Though I'd never wait to get into the Spotted Pig, or anywhere for that matter, I look forward to the next chance to stroll in and dine at this sublime swine.
