I would say make a pot of soup or chili and add in a bunch of your leftover carnitas meat. Also a frittata is a great way to use up leftover meat!
I love a rich and creamy cheesecake. I love NY style but my hubby loves ricotta cheesecake so I make both. It's a nice swich I must say. Pumpkin and chocolate are my favorites!

I love to make a hearty soup like minestrone or vegetable soup and add in tons of chopped spinach! Also a frittata is a great way to sneak in anything including spinach.
I would say beer cheese soup or some good old Chili! Either is perfect for the fall weather!
Drizzle with olive oil and toss with chopped garlic, then roast on a baking sheet so it can caramelize. Sprinkle some parmesan cheese on top during the last 5 minutes of cooking. So yummy!
I always use beef stock and add a good amount of worcestershire sauce because it gives it a great beefy flavor. Also add some fresh thyme to give the sauce some additional flavor. For a thickening agent ( I don't use one but if I did) I would say some cornstarch, or about 1/4 cup of boxed plain tapioca pudding. My hubby loves my beef stew and these are my secret tricks!
