You should be able to put pretty much whatever food items in your checked-in luggage that you want, just be sure that if they are liquids/gels/jars or anything breakable, that you pack them securely.
Nothing will ruin your day like getting to your destination with your goodies smashed into your clothes or broken to pieces.

I love tamarind-just-about-anything, and most of the Mexican candies I've had.
Except the awful, awful creation that are (is?) saladitos. I have friends that enjoy them, something I will never understand. :)
