Burt's Place: Home of the Pizza King of Chicago

Burt's isn't really a traditional "Chicago-style" pie by any means. The crust, as mentioned, is of a similar make-up, but it is more or less just sort of flat, slightly thick, and lightly covered with cheese. I actually fine that the lighter ammount of cheese is very much to my liking, allowing the really high quality sauce and toppings to actually do something but float around in a sea of molten dairy. The carmelized cheese around the edges is also something of a love-hate thing, but if you love it, you love it.

Quite simply, while I might qualify certain pizzas that I have had as my favorite of some style or another, when it comes to the simple statement of my favorite pizza, it's Burt's, no questions asked.

I think Burt's is a smelly DUMP, and I wouldn't recommend their pizza to anyone. The pizza is very average in my opinion, even below average actually, and they put practically no cheese on it !! Obviously old Burt is trying to save money... the pizza is 98% dough.

I saw the Anthony Bourdain segment on the Travel Chanel on Burt's. If you really listened to Bourdain, he actually WAS NOT very enthusiastic about the pizza. So, I think people are misinterpreting Bourdain's ho-hum attitude as a recommendation.

Worst of all, perhaps, is the attitude of those who run this place. They are inconsiderate, rude in fact, and don't listen to their customers. It's obvious they don't care... they just want your money.

Trust me folks, you'd be best to skip this place. There are an abundance of good pizza places in the Chicago suburbs... Burt's is NOT one of them.

Anthony Bourdain's show featured Chicago last night. For pizza, he headed to Burt's and at least learned a partial lesson. Vastly more important than Bourdain's commentary is the footage of one fine looking pie. Here's the video.

I think you're picking hairs here Dutch101. Thick butter crust, topped with cheese, then toppings and sauce is the quintissential Chicago deep dish pizza. No question that there are some differences in the quantities of the various elements, but Pequod's is different from Gino's which is different from Malnati's in some ways as well.
