Khao Soi might truly be one of the best dishes in the entirety of Thailand. It's a pity that so few places pull off good iterations outside of Chiang Mai.

Scalfin, this menu was actually meant to be for erev Rosh Hashanah, so Sunday night dinner. If you would like to have it on Monday, try doing some of the cooking after synagogue and get as much prep work done on the day before as possible.
