Handicapping 'Top Chef' Season 5 Finale

Stefan remains the man to beat. And to be the man, you gotta beat the man.

Seriously Delicious Holiday Giveaway: D'Artagnan Boneless Heritage Ham

I like a good ham salad sandwich. Thing is, I don't often find them. Maybe I can make one if I win!

McDonald's Filet-O-Fish: Yea or Nay?

They're awful but I love them. Total comfort food.

And for the person that asked earlier, I also enjoyed the McRib.

French onion dip. It's totally ghetto but guests eat the heck out of it.

The Food Super Bowl — Boston vs. New York: No Contest

You are correct that NY outshines Boston in the food department, but you are incorrect to limit the Patriots to just Boston. If that was the case you'd have to limit the Giants to New Jersey and the only thing NJ contributed to cuisine is Taylor Ham. Those are *real* slim pickings!

I live near Boston and there are many things I don't understand about food here:

1. Hot dog buns split wrong.
2. "Regular" coffee comes with cream and sugar.
3. Why is there no good pizza here?

@chiff0nade There won't be any asterisk. Not this year, not any year. Not in football, not in any other sport.

Bluecoat American Dry Gin

I ordered a bottle of it online this past weekend. I'm in love with Old Raj gin but it's twice the price. I can't wait to see how this measures up!

'Next Iron Chef': The Finale

Interesting. But that just says that Food Network won't air "Molto Mario" anymore. It specifically says he WILL continue to appear on "Iron Chef America." So does that mean there are now FIVE Iron Chefs?

From Serious Eats

'Next Iron Chef': The Finale

Serious Eats' pal Mario Batali's absence was conspicuous. Does this mean that Symon is now an Iron Chef and Mario isn't? If so, why? That was never addressed or acknowledged throughout the entire series of contests.

"Never trust a skinny cook"!

By the way, lisablock, I was going to disagree with you about people not buying cookbooks these days, but I just remembered my once-treasured and now, largely neglected collection of dusty tomes and I think I agree with you! I love logging on and finding one-off recipes.

I am envious of that pantry, I can imagine all the stuff I could fit in there! Thanks for the preview, very cool.

Amanda's kitchen came with the apartment. The pantry, however, is new to the place. Fantastic idea! So far, I am loving Food52 - great concept.

@NO_Pam - Thanks so much! (Custom cabinetry also doesn't help resale. I had a coworker who was over 7' tall, and his realtor took him to a house with custom cabinets built for someone who was around 5'. HA!)

The standard Kitchen counter top is 36" from the floor, a 34.5" cabinet and a 1.5" countertop. To find the optimal height for you bend you arms at a 45 degree angle with palms out flat and measure from your palms to the floor. That is the optimal work height for you. A prep island is a good place to adjust height as custom cabinets can get quite expensive.

Just as a curiosity, in addition to Pinar Yolacan (the author of the "Tripe lady") there is also Stephanie Diani (http://troppatrippa.com/articolo_offal-taste.php) and Susanne Wollowski (http://troppatrippa.com/articolo_inside-out.php). Both artists have used tripe to dress their models.

I'm curious as to how she determined what would be the right height for her counter. I have a small movable island that I would like to cut down like that, but I'm scared to have the cuts actually made until I'm certain it's going to be a good height.

McDonald's Filet-O-Fish: Yea or Nay?

cheap and delicious - it's a classic. during the mad-cow scare, this was the only sandwich my gf allowed me to eat from the mcd's and i learned to love it. and believe me people, you should worry more about where they get their dairy and poultry than worry about the fish. lastly, i love the tartar sauce overload, once i take it out of the box, i smear half of it on my box and use it as dipping sauce for my golden delicious potato stix. =)

Handicapping 'Top Chef' Season 5 Finale

It should be obvious to anyone who knows cooking and is watching the show that the fix is in to make Carla look good because she is "likable" and Stephan is not. They have given her a free ride to the top and the turn happened in the last couple of episodes. You only have to listen to the judges comments and reactions to Carla's food compared to how it has been for everyone else throughout the entire season. Carla has lately been getting lots over the top praise without any culinary dissection as if "its all about the love" trumps true culinary expression.

It will be Stefan or Hosea but I wish it would be Carla.

Just because you say "hootie hoo" doesn't mean you can't cookie cook.

I just simultaneously groaned and laughed out loud.

I'm rooting for underdog Hosea but think Carla's got it.

whoa whoa whoa... carla for fan favorite?? not if fabio has anything to say about that... and i really mean if he has ANYTHING to say. he's a sound byte waiting to happen.

it's basically like last year again. i think stefan and carla have an equal chance of winning it. stefan is susceptible to overconfidence and overvaluing his abilities. carla is prone to small mistakes and stress/timing related issues. both of them can cook, but i think stefan is a little more refined in his technique. i'd be pleased to see carla pull it out. i wouldn't mind stefan even though he's an ass. hosea winning would have the same effect that the possibility of lisa winning had on me last season.

it's hosea -- listen to the commercial - it says something to the effect of -- if you think you know Top Chef you're wrong -- so if everyone is putting their money on Stefan or Carla -- I'm going with Hosea

From Serious Eats

I dig Carla. She has all the makings of a chef, drive, personality, flavor, pulling a rabbit out of a hat. All of it. Stephan is who he is, a guy who makes bathrobes out of kitchen towels for stuffed animals. I bet he is real interesting aka creepy when you get to know him.
Hosea I could take or leave.
