PBS cooking were THE cooking shows between the Julia era and Food Network. The 'cajun' cook was Justin Wilson and all I can remember him cooking was crayfish and chicken and using Lawry's garlic spread. The stand-were Nick Onytail, Ming Tsai, Yan, Maryann Esposito (yes she was a bit dull but she was a fearless cook), Cooking at the Academy, Sarah Moulton. Jaques was the best chef around and the Frug was the best 'cook'.
He started flipping out towards the end, though. Food Network was a good evolution of that era, buy it definitely lost it's edge when it became a Lifestyle channel instead of a real food channel. I heard the marketing dept. complained the shows were too 'chef heavy'. Maybe I should go back to PBS.
