What's your favorite curry recipe?

As promised here is a Apple Curry Soup Recipe:

Preparation Time: 45 Minutes
Makes 4 servings


Ingredients:

2 ea. Leeks (chopped and washed)
1 C Sliced white mushrooms
2 Oz. Vegetable oil
2 ea. Granny Smith apples (cut in wedges)
24 oz. Apple cider or juice
7 oz. Coconut milk
2 tsp. Curry powder
½ tsp. Turmeric
2 pkg. Chavrie® fresh Goat Cheese (reserve 1 pkg. for garnishing)


Directions:

• Sweat leeks and mushrooms in vegetable oil until tender (without color) in a heavy gauge sauce pot

• Add apples, apple cider, coconut milk, curry powder, turmeric. Bring to a boil simmer for 20 minutes until potato is fully cooked

• Add the goat cheese and season with salt and pepper.

• Pour entire contents in a blender and puree or puree with a hand held mixer

• Strain through a fine chinois. And keep warm

• Serve hot

• Garnish with slices of apple or a dollop of cheese

Cuban Sandwich....mustard or mayo?

Nope there is no mustard in an actual Cuban sandwich ... the mojo is drizzled on the inside of the top piece of bread, like some people put oil on a sub.

Then the whole thing is pressed in a hot press ... if it is not pressed it is not a Cuban sandwich.

There are regional differences in how supposed Cuban sandwiches are made in the United States, but there are no regional differences in how an actual Cuban sandwich is made.

My understanding is that traditionally the bread is spread with both butter and mustard, and the roast pork is marinated in the mojo sauce (my favorite!). But, I am sure this varies both by region and what is on hand, as do most recipes.

Also Ybor City is not the birthplace of the Cuban sandwich ... the birthplace of the Cuban sandwich is Havana, which has the advantage of actually being in Cuba.

Neither of both! A REAL Cuban sandwich is not supposed to have either Mayonnaise or mustard. The only spread it is supposed to come with is butter. BTW, the butter is supposed to be spread inside AND outside to add that shiny look in the outside.

This is the craziest thing I have ever read ... it is NEITHER mustard nor mayo ... Cuban sandwich is made with Mojo, which is a garlic and olive oil based sauce.

If you put mustard OR mayo on it, it's not a Cuban sandwich.

It depends on where you are - Miami, Tampa or Key West. In Tampa and Miami, they do mustard. In Key West, I believe they do mayo.

Also, since we're geeking out: Tampa adds genoa salami to their Cubans as well. The supposed birthplace of the Cuban sandwich is downtown Tampa's Ybor City. Back at the turn of the century (er, the other turn of the century), when Ybor City held all the old cigar factories, the Cuban and Italian immigrant neighborhoods rubbed shoulders, hence the salami.

Anyone know of a recipe that uses rice instead of ramen noodles? I think rice with a cheese layer on top would be quite tasty and somewhat healthier than ramen.

Pepperoni Ramen Pizza

Sounds awful. I can't even look at this picture. One night in college I ate 2 packages of ramen noodles. I was working on little sleep and and high stress. The noodles did not stay in my stomach for more than 10 minutes. That was 15 years ago. I still can't stand the thought of ramen noodles. I can't even smell the seasoning packet you get with them.

Looks like a variation on a spaghetti torte. Not sure I get the hate. Is it because of the ramen or because it's being called a "pizza"?

I once made a noodle dish in which the noodles were cooked first and then placed in an oiled baking pan and were baked until crispy. Then stir fried vegetables, tofu and sauce went on top. The recipe described it as "Vietnamese pizza." I don't know how authentic it was, but it was tasty.

What do you put on pasta?

Nattou... Nattou spaghetti is an amazing way to use nattou in a cooked dish as much of it's usage is just a topping for rice or alone.
I recommend some red chilis, butter and shoyu. You can even dot it with parsley at the end and cook it with some onion or shallots.

Cheap Healthy Good isn't always vegetarian, but there is a majority of vegetarian recipes on that website, and I really enjoy reading it! The section tagged as "Recipes: Vegetarian" has 117 entries, including this recipe which looks fantastic!

Eggnog -- Love it or hate it? What do you put in it?

@Hunnyoil ~ you said, "Imagine what it was like in the '50's".....I don't need to imagine. Granted, I was just a little kid, but I made it and loved it. The only difference then from now was that you had to make it yourself and it was SO delicious. I've tasted a couple of the supermarket brands and they don't even resemble real egg nog. I threw them out. Is real egg nog rich and fattening as hell? Oh yeah, and that's why it's a seasonal treat. It wouldn't be Christmas without it for my family. If you've only tasted nogs you buy, try making the real thing - treat yourself!

I make a non-alcoholic version of Coquito - the Puerto Rican cousin of the eggnog. What lacks in alcohol, makes up in spiciness.
