You could use Spectrum Shortening for the fat. It's organic palm fruit oil that's naturally solid at room temperature with no trans fat. You'll get a flakier crust using just palm fruit oil, rather than using Earth Balance Buttery Sticks (combination of fats/oils), but those are great if you're ever looking for a butter substitute for baking.
