I eat cookies every day.
There was no food service on Saturday nights, but thankfully a group of Hare Krishnas provided a free meal on campus for sitting through a food demo. At first, I went only because it was free. But those demos were a real trip. Happiest people I'd ever seen and such a contrast to a somewhat depressed college crowd. Their food was quite tasty, by the way.
VERY interesting! I made some vanilla ice cream with coconut milk, the thick kind from a can, but without eggs. Taste testers loved it and had no idea it was anything different from the usual. But now I'm off to make a batch with some egg yolks. Can't wait to do a side by side comparison. Great article!

Next time you make gluten free bread, slash with a wet knife just before placing in oven.
You could use Spectrum Shortening for the fat. It's organic palm fruit oil that's naturally solid at room temperature with no trans fat. You'll get a flakier crust using just palm fruit oil, rather than using Earth Balance Buttery Sticks (combination of fats/oils), but those are great if you're ever looking for a butter substitute for baking. Blanket of bread crumbs mixed with cheese would help.
I drink a tablespoon of apple cider vinegar in a glass of water every day for the same reason I follow @gastropoda on twitter - it cuts my natural sweetness.
I wouldn't avoid using salt unless it were absolutely necessary. I've done some baking without salt for a person with chronic kidney disease (needing low protein, potassium and sodium).
Using liberal amounts of vanilla and other spices & herbs is really important for baked goods that don't have any salt.

I don't know why, but pumpkin pie has never appealed to me very much. I'm making pumpkin cookies and flourless pumpkin cake to bake around the pie issue.
