There was no food service on Saturday nights, but thankfully a group of Hare Krishnas provided a free meal on campus for sitting through a food demo. At first, I went only because it was free. But those demos were a real trip. Happiest people I'd ever seen and such a contrast to a somewhat depressed college crowd. Their food was quite tasty, by the way.

Do I Need to Use Eggs in Ice Cream (and How Many?)

VERY interesting! I made some vanilla ice cream with coconut milk, the thick kind from a can, but without eggs. Taste testers loved it and had no idea it was anything different from the usual. But now I'm off to make a batch with some egg yolks. Can't wait to do a side by side comparison. Great article!

vegan, non-trans-fat pie crust?

You could use Spectrum Shortening for the fat. It's organic palm fruit oil that's naturally solid at room temperature with no trans fat. You'll get a flakier crust using just palm fruit oil, rather than using Earth Balance Buttery Sticks (combination of fats/oils), but those are great if you're ever looking for a butter substitute for baking. Poll: Can you cook without salt?

I wouldn't avoid using salt unless it were absolutely necessary. I've done some baking without salt for a person with chronic kidney disease (needing low protein, potassium and sodium).

Using liberal amounts of vanilla and other spices & herbs is really important for baked goods that don't have any salt.
