Foodisphere Erupts Over Paula Deen Diabetes Announcement

It is our business when she's making public announcements all over national television about it, endorsing a pharmaceutical company for it, and recklessly refusing to fully acknowledge the power that diet and lifestyle have on her particular disease.

And her particular disease, type 2, is without question a disease largely caused by diet not genetics, which can also be reversed by diet. Something she refuses to admit and instead continues to promote the food that made her the empire she has, and just mask it with a drug endorsement that will make her even more money.

Forgive me for not feeling sorry for her situation.

Foodisphere Erupts Over Paula Deen Diabetes Announcement

obviously I'm not happy about her illness, I wouldn't wish an illness on anyone, my issue is with how she finally came about announcing it..

had Paula come out with this on her own without having it timed perfectly with an endorsement of a diabetes drug, or had she at the very least also acknowledged that diet is a major leading contributor to the disease, and can also be the cure mind you, then I wouldn't have a problem..

but she's being incredibly irresponsible being in the position she is with the influence she has.. she's not promoting a change in diet, she's never promoted moderation no matter what she says, moderation means something totally different from one person to the next, and she's basically now just a microcosm of everything that's wrong with diet and lifestyle in this country.. which is live and eat the way you want as if there are no consequences, then bandage the problem with meds and continue on as if nothing's wrong.. and might as well make some money off people's diseases while you're at it.. it's just sad

I used to watch her for entertainment, not the atrocious recipes, but I can't even bring myself to do that anymore

The Vegan Experience, Day 5: Say No To Faux

nothing unhealthy about seitan, as long as you don't have a wheat/gluten intolerance or allergy.. it's just pure wheat protein.. gotta watch for additives and sodium in store-bought, but otherwise it's perfectly healthy

From Serious Eats

The Vegan Experience, Day 5: Say No To Faux

@ guycooking:

I wouldn't invite those people back either.. not because they're vegan, but because they're just ungrateful

I believe "vegan" gets a bad rap a lot of the time because of the personalities and actions of certain people, which has nothing to do with the fact they're vegan, it's their demeanor..

I know plenty of vegans, of which I'd like to include myself, who try to make as little a fuss as possible when I'm in social gatherings.. if someone has made an effort to accommodate me but mistakenly included an ingredient they didn't realize wasn't vegan, I'll at least acknowledge the effort and politely explain why I can't eat it.. I always say not to worry about me, I'll eat what I can or eat what I brought myself, because I do usually bring at least a couple things for myself so they don't have to worry about making special or separate.. but I definitely will not put my ethics and morals aside to make someone else feel comfortable, that wouldn't be right either

but I don't think it would be a bad thing for people to make it a habit to offer at least one or two vegan options at dinners and gatherings.. it's not like many dishes and meals aren't already vegan by nature, it's not like it would take going to great lengths to do it.. not even for the sake of vegans, but just for the sake of variety and options, no matter who may be attending

From Serious Eats

The Vegan Experience, Day 5: Say No To Faux

I'm vegan and I don't really go for the veg-based meats either, and I also try not to describe them as fake or mock or any of those terms, because for me that would be saying that I consider animal-based meats to be superior, and that one is trying its hardest to reach the status of the other.. but for ME, they're there to serve their own purpose, to be an alternative, not a wannabe

that being said, I do occasionally buy the less processed products for something easy to add some variety.. or if I'm really craving a certain texture or mouth feel, then I'll go for them.. because that's really what we crave.. salt, fat, texture, flavor, familiarity.. it's not that we actually crave animal flesh

so I'm a fan of the Field Roast products, which are purely grain and vegetable based, they're soy free.. also Tofurky is surprisingly minimally processed, they don't use soy protein isolates, they use tofu and wheat.. so those are the two i'll indulge in every now and then and on holidays.. Gardein also makes a good product as far as texture and flavor, but it's definitely more processed

The Serious Eats Guide to Food Photography

From Drinks

Taste Test: Eggnog

I'm vegan so I'm all about the non-dairy nogs..

but actually even before I was vegan I used to buy the Silk Nog, I liked the flavor and that it wasn't so heavy, and you could actually drink it without feeling like your arteries were narrowing that very instant

I tried the So Delicious coconut milk nog this year and thought it was good.. the texture/thickness is much closer to dairy-based nogs, but the coconut definitely comes through in the flavor.. which isn't a bad thing necessarily, if you like coconut

just stay away from the rice milk nog, it's like cloudy sweet nutmeg water

From Recipes

Pumpkin Orzo with Sage

Boudeccea, unsweetened almond milk would be a perfect substitution.. or even unsweetened coconut milk, the beverage variety by So Delicious, not the canned kind

From Recipes

Black Bottom Peanut Butter Mousse Pie

please don't use the hydrogenated kind.. you can find natural peanut butters made with non-hydrogenated palm oil that don't separate

From Serious Eats

Served: Is Cheese Good for You?

the simple answer is no.. it no way, shape or form is cheese good for anyone, from a health perspective

that goes for dairy in general, which is why it doesn't matter whether it's the highest quality artisinal cheese you can find, or pre-sealed packaged cheese product.. whether it's a full fat calorie bomb, or low-fat lightened version.. it's all got the same properties that just aren't good for our bodies

and of course "moderation" is always the excuse for when we know something is bad but need justification for our actions.. so i can't say i really believe in moderation.. if someone told me rat poison in my food was ok to eat in moderation too, you still wouldn't catch me eating it

then of course there's the animal welfare and environmental impact issues of the dairy industry, which is a whole other ugly story

From Serious Eats

Taste Test: Strawberry Yogurt

I don't consume dairy now, but when I did I used to be a fan of Stonyfield's low- and non-fat yogurts

as for the non-dairy options, my favorite is the one that people either love or hate, that's the Amande.. it's definitely not going to remind you of dairy-based yogurt, but I love it's unique flavor, and they've it's texture from when it first came out

the So Delicious coconut yogurts are great too, but pretty sweet, more dessert like, but they are very lucious.. there's also rice milk yogurts that aren't that great.. Silk is probably the best bet if you're used to dairy yogurts, it's a good middle of the road choice

Harvard's New 'Healthy Eating Plate' Provides Alternative to USDA's MyPlate

This is what the official MyPlate should have been in the first place.. though I appreciate the USDA's version overall, it does leave room for interpretation on the consumer's part to make unhealthy choices yet still be within the guidelines

The addition of "whole" grains in this version was a sad oversight by the USDA.. clearly not everyone is going to make their grain options whole grains for every single meal, which is fine, but at least having "whole" on the chart would indicate that's the ideal to strive for

Also having the dairy recommendation removed would be a major improvement.. anyone truly educated in nutrition knows that dairy is not only unnecessary, but unnatural in a human being's diet past the age of weaning, and the consumption of dairy can cause numerous health issues far beyond weight

Limiting meat, especially highly processed and cured meats, is an obvious one

From Serious Eats

Use Cashews to Make Vegan Whipped Cream

I do happen to be vegan, but cashew cream is delicious no matter who you are.. it's good stuff

I've had more liquidy cashew creams that are great subs for heavy cream, as well as the thick, whipped cream subs also

Simple to make, the only issue might be cost, since raw, and especially organic raw, which I always prefer, can be pretty pricey.. but the result is worth it

From Talk

Goodbye, Food Pyramid! Hello, Plate.

it's a definite improvement, and is a whole lot easier to understand at a glance than the mess "my pyramid" was

love that veggies and fruit are shown filling half the plate, protein is still a bit too large, especially considering you get it from all the other groups on the plate already, just not all at the same degree.. though it is nice to see it not labeled "meat" as if that's the only source

the biggest problem is the ridiculous dairy glass on the side.. completely unecessary, sticks out like a sore thumb and only makes it painfully obvious that it's there for no other reason than to appease the dairy industry itself, thanks to the weight they pull and money that's thrown around when it comes to the groups that develop these regulations

but again, a definite positive step

From Recipes

Hervé This' Chocolate 'Chantilly'

spidercamp, you're still wrong.. unadulterated chocolate is vegan, nothing must be done or removed to make it vegan.. it's when things are added that it becomes not vegan, namely milk fat or milk powder.. most standard dark chocolate bars and chips are naturally vegan, simply containing cocoa solids, cocoa butter, sugar, and usually soy lecithin.. no animal products to be found.. now lighter and obviously milk chocolates would be a different story

From Serious Eats

Would You Eat Human Cheese?

No, just as I don't consume milk or milk products from any other species

But it's interesting to see the disgust to drinking human milk or cheese made from it, when drinking the milk or eating cheese from milk of another animal has become such a normal idea

It actually just puts it into perspective as to how unnatural of a concept that is.. milk is meant only for the offspring of the mother that's producing it, and only for the time necessary for growth and development, and then production stops, and we lose the ability to produce lactase, the enzyme which allows us to break down lactose found in milk

I guess anything can become an accepted idea if it's preached and practiced enough

I'm a big fan of any of the Clif line of bars.. original Clif for a chewy oat bar, Clif Mojo for crunchy oatless, Luna bars for a more rice crispy-esque bar, and Larabars are delicious for a simple soft fruit based bar

and for those who liked the Clif Nectar bars, their new Clif C bars are made simply with just fruit and nuts like they were, just a bit of a different texture and not the same variety of flavors right now

It Must Be Spring: New 2010 Ben & Jerry's Flavors Are Here

I've been on the hunt for Boston Cream Pie for a while now with no luck.. I tried Maple Blondie, Milk & Cookies, and Peanut Brittle from a scoop shop, and it's close between Maple Blondie and Milk & Cookies for my favorite, both are excellent.. Peanut Brittle wasn't bad by any means, just less exciting.. I also saw a new limited flavor at Walmart the other day, Flourless Chocolate Cake, haven't tried it tho, not a huge lover of chocolate by itself
