One of my favorite fall/winter meals is roasted veggies. Whatever is on the cheap rack at the local fruit stand gets tossed in salt, pepper, and olive oil then dumped on a heated cookie sheet.

Potatoes, peppers, cauliflower, broccoli, onions, garlic; I don't care. As long as it is nicely caramelized.
