A Sandwich a Day: The MC Schnitzel from Senate in Cincinnati

The multiday preparation for this sandwich starts with pork belly, butt, jowl, and trotters, which are braised with mirepoix and garlic. The rendered gelatin from the trotters seeps into the marvelous meat milieu which—when shredded, packed in a pan, and left to chill overnight—sets into a terrine loaf. The following day, it's sliced into thick slabs, floured, dipped in egg wash and panko, deep fried, and served up to lucky diners. That's one fancy-pants schnitzel. More

Challah is an excellent (if not traditional) choice for the Cuban, and I really liked it. The perfectly grilled challah was nice and crunchy, yet soft and yielding, unblemished by the Cap'n-Crunch-roof-of-mouth effect that a toasted and pressed sandwich sometimes presents. Pepperidge Farm makes "verythin" slices I like to use--they crisp up nicely and I can focus on the cheese a little more.

I can vouch for the mayo method. A few years back for grilled cheese month in April, I made a different grilled cheese sandwich for lunch every weekday. No repeats. I tried regular butter, mayo and goat butter. Goat butter is nicer because of the higher smoke point, but if you are pressed for time, mayo is the way to go.

We have a PJ's right across the street from our apartment. On days where we were feeling super lazy, we'd order a pie online and go pick it up. It was passable, though we'd make square cut, extra cheese, extra bake modifications. Then, a few months ago I read an article quoting one of the head PJ honchos, absolutely dismayed that he might have to pay health insurance for his employees, and stating that he would pass those costs along (if they could not be avoided in the first place) to the consumer to "protect his shareholders". Chain Reaction: Joe's Crab Shack

Joe's Crab Shack has forever earned a memorable spot for us in our minds. The food is decent, and we've gone there a few times for a bucket or two.
